Birthday pt with family

Since dad had birthday like a week ago, and i have birthday in like 2 weeks and theres like way too many parties during xmas holidays we both celebrated together with family (grandparents) sunday.

Ofc i saw this as nice oppertunity to make cakes, and so i did ;p

First i made this awesome "dreamcake" from vegetarbloggen with almond bottom with chocolate pieces in it, vanilla cream layer above that, and on top a jelly layer with strawberries in it.
It was really delicious, so i will definitely make this one again!


I also made this apple spice cake with almond topping from vegweb where i added raisins in the dough for extra awesomeness =p


 Then i made some sandwishes with cucumber and polenta with mushroom and onion and leeks.


Since we were celebrating my birthday i got some gifts! (I love getting presents!! xD) 
I got some money, some socks, a sweater, some cooking equipment, a soap, and The Happy Herbivore cookbook by Lindsay S. Nixon that i've been wanting for long time now! =D Will be sweet to try out the recipes =D

So was a nice birthday celebration, and will hopefully be an even better celebration on my birthday! =D

Pumpkin + mac & sauce

This year my parents surpriced me by buying a pumpkin (i guess i had asked/spammed for one so more likely they buy then ofc xD).

The bad thing in norway is they only got pumpkins week before halloween and not the rest of the year, atleast not that i have seen, and you have to buy a superbig one then. The one i had was probably 6+ kg.

I was too lazy to carve it out for halloween, so i just ate it =p Like every day for a week, so got a bit tired after a while xD So i tried different things, and what i found out worked best was pumpkin pieces in curry or soup, or grated pumpkin in different dishes (i tried in sauce and lasagne). In muffins/pancakes was also good =p What wasnt good was oven roasted, but could be i did it badly.


This i made twice (with and without cauliflower). I dont remember exactly what i did, so ill just put what i think i did.

Mac & pumpkinsauce:

Ingredients:
Macaroni (or other pasta)
Margarine
Onion
Garlic (optional)
Cauliflower (optional, and can also use other veggies)
Grated pumpkin + maybe pumpkin puree if you got that (i had leftovers)
Flour
Non-dairy milk
Stock cube
Nutritional yeast
Salt and pepper

Boil macaroni. Saute onion and garlic and cauliflower (could be i used water also, i dont remember). Mix in some flour and add milk, grated pumpkin, stock cube and let it simmer. Add nutritional yeast and salt and pepper.

Yammies! (yes it looks like puke, but tasted very good =D)

Ratatouille-nacho-hybrid XD

Long time since i made/ate this but it was awesome so i'll post recipe since i wrote it down when i made it xd And yes im still alive, just havent been updating blog in like forever xD


So ye, wanted to use eggplant i had laying in the fridge, normally was gonna make some pasta thingy with eggplant and red bell pepper, but my sis had leftover taco shells, so i figured i would be using them in recipe, so instead i took inspiration my nacho recipe lol xP

Here we go!

Ingredients i used +- since i didnt really measure =p Feel free to skip or add anything you like if you want to make something similar
1 onion, diced
0,5 eggplant, 0,5 cm thin slices, into 1-2 cm pieces
1,5 vegetable bullion cube + water
1 jar pasta sauce
Some water
Some tvp (maybe 0,5 dl?)
1,5 red bell pepper, (i ovenroasted 1 while 0,5 raw, pieces)
0,5 zucchini, grated
1 carrot, grated
Spices: paprika powder, cumin, coriander, onion powder, nutritional yeast, salt, pepper
0,5 can corn
Taco shells (in pieces) or tortilla chips
Taco sauce

I sauted the onion and eggplant in the bullion water, while ovenroasting a bell pepper where i had removed the green part (i forgot name xD) and seeds on 200°C grill function until all sides were blackish and then i removed skin and chopped in pieces. I added pasta sauce + water (for more wetish consistency)+ tvp + grated carrot and zucchini and the bell pepper pieces and let it simmer nicely. Then i spiced it and let it simmer some more. Then i added corn into the sauce. I crushed taco shells and laid a layer in the bottom, then putted the sauce on it, then a new layer with crushed taco shells, and then some taco sauce on top. I putted in oven for 15 minutes on 200°C.

For some reason the bottom taco shells tasted bit cheesy (it was all softish xD).

Bit more veggies than normal nachos i guess xD But thats cool ;p

Norwegian constitution day cake =p

Since its norwegian constitution day today i wanted to make a cake, and so i did =p

This time i made this cake from vegetarbloggen (norwegian): Marsipan cake, folloing the recipe more or less (probably less xD).

It was good, but could have been better (probably if i followed recipe it would have been better haha). But it wasnt bad for being the first time making a marsipan cake like that! =D

I normally wanted it circular though, but we didnt have enough shapes for that, so just made it rectangular then xd

Facon

Finally got myself liquid smoke, nutritional yeast, and tofu, so i wanted to try making facon (tofu bacon)! These stuffs are very yummy and taste more or less the same as bacon!!! It really rocks! If you like/love bacon you should try it! ;)

So all what you need is tofu, nutritional yeast, soy sauce, liquid smoke, salt and oil to make these yummies ;p

Pineapple muffins

Pretty cool muffins =p Had some leftover canned pineapples in the pineapple juice thingy, so decided to make muffins from it, which turned out really well =p I'm not sure if this is the exact amount of ingredients i used, but its something like this =p Just add more flour or liquid if not =p

Ingredients:
1,5 dl flour
1 dl oatmeal
0.5-1 dl sugar
1 teaspoon vanilla sugar
0,5 teaspoon baking powder
1 can chopped pineapples in juice including the juice (my can is 227 g if im correct, but if you got bigger can just add more flour =p)
2 teaspoons oil
Soymilk or water if more liquid is needed (which it probably is =p)

Mix dry ingredients together, add wet ones, mix and add more liquid (soymilk/water) if its needed. Pour into muffin shapes and bake in oven on 175°C for about 30 minutes.

I remembered a bit late to take picture; aka when i was 1 bite from finishing the last pineapple muffins xD

Beanmix with couscous

I had more leftover beans after making the bean brownies, and i had bean-burgers yesterday so i felt like having something different for dinner today. I searched some blogs and got the idea of making something like refried beans.

This ended up in me making this (which tasted awesome!):

Ingredients:
0,5 onion, chopped
1 mushroom, chopped
0,25 bouillon cube + some water
~100 grams (black) beans
2 tablespoons tomatopuré
Soy sauce
Spices: cumin, coriander, chili, paprika, onion, cayenne, nutritional yeast, salt, pepper

Couscous
0,25 bouillon cube + boiling water
1 teaspoon lemon juice

First i sauted the onion and mushroom in the water and bouillon cube, then i added the beans and the tomatopuré, and i tried to squeeze the beans a bit too =p Then i added the spices and soy sauce. Meanwhile make the couscous with bouillon cube and boiling water, and add the lemon juice to it. Then mix everything together =p I also added cucumber ^.^ Delicious! =D

Chocolate-zucchini muffins

Zucchini rocks, specially in baking ^.^ (and for dinner =p)

I found a recipe for chocolate-zucchini muffins here at happy herbivore (english), and i just had to make it! =D

I'm happy i did, this stuff is yammie! =D

I also added nuts in, which made it even better ^.^

So if anyone got leftover zucchini that they wanna use, chocolate-zucchini muffins is a yammie way to do it =p

Black bean brownies

Yesterday i boiled up some black beans i had in the closet. I decided to make brownies since i had heard that bean brownies are yummy =p I kinda followed 2 recipes, the below one on vegetarbloggen (norwegian) and the one it was based on from happy herbivore (english).

I followed a bit from each recipe (they are more or less the same) and added whatever i thought was needed. A bit annoying was it that it doesnt say amount of boiled beans the recipes use, only canned or dry, so i used 375 gram. I shared with my family and they said it tasted ok, but they could be better (this was also my opinion). Maybe more chocolate or sugar would help, since they were lacking some taste kinda =p And also nuts in would be great i think! =D The dough tasted better than the finished brownies, so i can save myself an hour there by just eating the dough instead, if i dont plan to make brownies from it =p

They dont taste like beans btw =p But it could be smart to tell people that they contain beans after they ate from it, since some people are sceptical to beans in their brownies and wont taste it if they know @_@

Bean-rice

This is a yummy recipe that i sometimes make with beans =p I found it somewhere on vegweb some years ago, but i dont remember exactly how the recipe went and i dont find it atm, so here is what i did with possibly other amounts of ingredients =p

Ingredients:
0,5 onion, chopped
2 garlic cloves, chopped
Olive oil
1 bouillon cube+water
0,75 dl rice
Basil to taste (i think i use like 1-2 tablespoons)
0,5 can kidney beans, drained and rinsed
Salt and pepper to taste.

Saute the onion and garlic, add the water and bouillon cube and rice and simmer. Spice with basil and add kidney beans either while the rice is simmering or after, i dont remember what gave best result. Spice with salt and pepper and possibly add more olive oil, but i didnt have that =(

Tastes very good with tomato =p I also added some boiled potatoes in it this time since there were some in the fridge, and i served it with tomato and cucumber.

Revival

I guess i should revive my blog since it's a handy tool for finding recipes that i like =p

Currently i live in Norway with my parents and brother and sometimes my sister lives here too, and i got myself a job at Right Price Tiles now where i sell tiles. It's a nice job, but i dont know too much about tiles so i often feel like i'm a bit misplaced when people want something i dont know.

I work full time, so i dont have much time for cooking or other things. Most of the time i get home at 21 or so, and then i dont really feel like cooking, so i binge on snacks instead >.> Luckily my mom sometimes has some meals ready for me when i get home so i get some warm dinners during the week =p Thanks mom! <3

At work we get fresh bread every day, normally one white and one brown. I usually eat the brown one with strawberry jam or sometimes with mustard and cucumber for breakfast and lunches at work =p

In august i plan to start studying again since i found no jobs that needed my bachelor in physics >.> Hopefully i get into the master program in renewable energy. I guess there might be some more jobs that want/need me then xD I'm fearing the master though, and i dont really want to study since i have no motivation to study, and i feel bad since im not studying while i know i should be studying, and i'm also forbidding myself from having fun since i should be studying =/ So basicly i'm wasting time doing nothing =/ But i guess i'll survive a master, just like i survived my bachelor -_-

If anyone wonder what to study, i reccomend to study something you have interests for where you can get a job after (unless you like to study or so, then you can choose whatever you wanna xD).
I feel my degree is kinda useless, so my options are:
1. Have a job where no degree is needed (easy to get).
2. Take a completely new degree in another subject (3+ years).
3. Build further with a master (2 years).
4. Search for a job that would want a bachelor in physics (hard to get).
I picked option 1 and 3 since they are the quickest =p And i guess it might sound more impressive with a master than with a bachelor =p

Scrambled tofu


Pretty easy and yummy stuff to make, and you can use whatever vegetables and spices you have or want to use =p

Here i used about 50-75g tofu (where i squeezed as much water as possible out of it first before i ripped it into small pieces).

First i sauted onion, garlic, carrot and green bell pepper, then i added tofu and spices and soy sauce. The spices i normally use are something like black salt (gives a bit eggy taste), turmeric (yellow ftw), paprika, coriander, cumin, chili, pepper and normal salt if needed.

Then i serve on bread with margarine =p

Perfect breakfast! =D

Cooking book project week 7

New week new testings =p

First i started off with some kinda mashed potatoes and brussel sprouts with some mushroom, sun dried tomatoes and walnuts. In my opinion, the recipe has too much potatoes compared to other stuff (i would like it more green and more mushrooms =p). But other than that it was good =p


Then i continued with oven roasted vegetables with polenta-balls, which was also yummy (but dunno if i will make it again, i guess roasted vegetables arent my favorite xD polenta i like though =D) This is also my first (known) meeting with fennel, and its kinda cool taste on it =D


Further i failed to cover my filled bread with bread dough, so i think i would go for more dough next time (i doubt there will be a next time even if the bread didnt taste bad =p)


Then i had nut roast, which was also good but i prefer the one i normally make. It was smart having lentils in it though i think, but the leek and celery in it was a bit annoying xD


Then i had paella de verduras, replacing the asparagus with brussel sprouts =p and using turmeric instead of safran >.> This one was yummy as well =p


Then to my favorite this week =D Spring rolls!! =D Though mine looks more like spring packages >.> But they were really yummy!! This is the first time i make spring rolls myself =p I did them in a pan instead of frying them though, they would probably be even better fried =p I served them with some sweet chili sauce that fitted perfectly! =D


This week i wont be doing cooking book project since i'm leaving back to Bergen, Norway tomorrow so my bf can study a bit better with less to worry about, and so i can hopefully find a job. If anyone has a job for me in Bergen, feel free to tell =p

So ye, this week has mostly been trying to eat all of the fresh food that wont last too long, and i also tried to clean the freezer a bit by eating smoothies =p Now no more half year old frozen bananas or so hiding in the freezer xD Tomorrow i will make spring rolls for having on the plane trying to use the remaining ingredients that are lurking around in the fridge. Hope they will be yummy too even if there will be other ingredients in them (i'm out of soy sauce @_@!!).

Will be nice to see family and friends again and having people actually enjoying my cooking and not just complaining about it smelling or tasting bad =p And i somehow miss the mountains even if i never really went on many mountain trips =p (they only got hills here in Leuven, or not even that xD).

But i will miss Leuven too! Everything i want/need (except liquid smoke, nutritional yeast, sour cream, holiday dipmix, and ground cloves) are closeby to my apartment and it's pretty cheap here too compared to Norway =p

I will miss my bf and his family too, but i guess i will see them again in the summer. And i will miss that it is almost never raining here, unlike in Bergen where it is raining a lot more >.>

I will try to continue the cooking book project in Norway from next week =p Still a lot of recipes in my books to be tasted! xD

Cooking book project week 6

This week was more yummy foods =p And one bad lol =p

First i started of with carbonara with sundried tomatoes, which was yummy =p My bf agreed to eat it too so i made for him also.. but he didnt like it because of the mustard sauce (he never told me he doesnt like mustard >.>) so i ate everything which was a bit too much for 1 day =s But ye, i liked it xD


Then i made mushroom cannelloni with leeks sauce =D This one was very yummy too =D I skipped the olives in it though since i was too lazy to spend my money on olives, not knowing if i like olives or not. Still turned out good =D


Then i had stir fried tofu, mushrooms and peas which i also liked, but it was a bit dry so i added more soy sauce to it =D Yummy aswell =p


Then i had curry with sweet potatoes and banana, and i replaced the pumpkin that was normally supposed to be in it with eggplant xD Pumpkins are pretty big, and i didnt feel like eating pumpkin every day for a week or so @_@ This dish tasted weird in a bad way, so i doubt i will make it again, i even wrote a warning in the book not to make it xD Maybe i used too much curry paste, or it was the mix with the banana that was bad, im not sure, but i bet the ingredients will be tasting better in other recipes instead xD


Then i had more cannelloni, but this time with green beans and corn puree thingy filling, with a white sauce on top =p I think i liked the other cannelloni more, but this one wasnt bad either =D


Last i had chickpea dip (hummus? xD) where i used peanut butter instead of tahini (i read somewhere that i could do that xD) since i didnt really like the price of tahini >.> peanut butter was cheaper =D This i ate with pita, santa maria vegetarian taco mix, and some vegetables =p This hummus is the best that i have ever tasted! =D (though the only other hummus i have tasted was the one from GoGreen so probably you other people might have tasted a better one xD)


So ye, that was this week xD Mostly yammie except for the curry thingy xD

I feel a lot of my dinners/meals (~6) are caught up in this project now though, maybe i should start eating dinnerish breakfasts too so i can try out other recipes aswell, and get the leftover stuff in my fridge used xD Or cake/cookies for breakfast *drool* =D (i did that on wednesday lol =p)

Dinnerish breakfasts might be cooler than my normal breakfasts that are normally consisting of slices of bread with jam, tartex (that is more than 1 year out of date but still as yummy as fresh and not causing sickness/death!!!!) or my recently bought (yammie) peanut butter xD

Banana brownies

These banana brownies looked so yummy i just had to make them!

The recipe i found here on Sweet Potato Soul her blog.

Since it's stupid measurements (cups xd) i'll write the version i think i used incase i wanna make it in the future so i dont need to find a converter all the time =p (its been some weeks since i made it so could be i remember wrong what i did).
I guess the original recipe is cooler so i would check out that one too (clicky the link above) =p Her pics looks way yummier than mine atleast since my oven is a bit fucked up and likes to burn stuff on the top and leave it unbaked at the bottom.
I also didnt use coffee powder since i dont have that, but i think that its yummier with, if you are so lucky to be in possession of coffee powder =p I also dont have a fancy egg replacer, but i dont let that stop me xD

The recipe i write is for my mini cakeshape of 13x13 cm.

Ingredients:
0.5 dl coconut cream (the creamy part when you have it in the fridge and it seperates)
50 g dark chocolate
0.5 dl flour
Tiny bit of salt
0.25-0.5 teaspoon baking powder
0.5 tablespoon flax seeds + 1.5 tablespoon water
0.5 teaspoon vanilla extract
0.5 dl sugar
1 ripe banana

I possibly also used like 1 teaspoon of corn starch? I dont remember XD

First i melted the coconut cream and dark chocolate (together) in a bowl sitting above boiling water.
Then i mixed the flax and water together and added 0.5 mashed banana, vanilla extract and sugar and mixed. Then i added the choco-coconut sauce to the dough when it had cooled a bit. Then i added the flour, salt and baking powder and mixed more. Then i poured it in my pretty little cake pan (that still seems too big since i eat all the cake myself >.>). Then i sliced the remaining 0.5 banana in slices lengthwise and had it on top before i putted the cake in a preheated oven on 175°C for about 40 minutes.


Like i said, my oven likes to burn stuff xD I also think it wasnt totally baked inside, so maybe check that before eating =p


Some offtopic: I've been waiting 4 months now for nutritional yeast from iHerb (probably it got lost in the mail or so), so i kinda give up on it ever arriving =(( Sooo, anyone know where i can buy nutritional yeast in Leuven? Since i have the feeling that if i try ordering something online again that it will never arrive >.> I also kinda want liquid smoke =D Anyone know if they sell that also in Leuven? I guess the answer is no to both, but its worth a try xD

Cooking book project week 5

This is the first time i made food from all of the books in one week!

First i started out with mexican tomato-thingy (i think its nachos xD). Since i wanted to get rid of the leftover corn i had, i used like 3x as much corn as i was supposed to, and i used less tomato (1 big instead of 1,5 tomatoes). I also used yoghurt instead of sour cream and cheese.
Personally i prefer the nacho that is already on my blog somewhere, where i used lasagne sauce =D


Then i had vegetable moussaka. I liked this one better than the other one i had some weeks ago. Again i used yoghurt on top. Also my bf pointed out when the yoghurt (alpro soya naturell) is heated it smells like sour socks xD I still think the yoghurt taste yummy though, but its better when its not heated xD


Then i made indiase tahoe. But i have a feeling that the morocco-yoghurt is different than the alpro soya yoghurt since it doesnt look like they used yoghurt in the pic in the book xD The heated yoghurt smelled like sour socks again, so i think i prefer making scrambled tofu or something if i use tofu =p (i made scrambled tofu with the remaining tofu xD) I also didnt have munt. And i served on bread instead of naan =p


Then i made filled vegetables. I was too lazy to make the extra sauce for pouring over like in the recipe, so i just added the ingredients i had in the filling. And like always im missing or replacing ingredients =p Atleast i had all the vegetables xD The bell pepper tasted yummiest but i still prefer the filled bell pepper that i normally make. I also forgot to salt and pepper the filling =(



Then i made mushroom risotto, using a different kind of mushrooms than in the recipe and i boiled the mushrooms together with the rice instead of adding them at the end so it would have more mushroom taste.


Last i made filled videetjes (i have no idea what that means but its filled puff pastry xD). These were pretty cool =p I burnt the puff pastry though (my oven likes to burn food), and i replaced some vegetables, so i used carrot, broccoli, peas, and brussel sprouts while recipe suggested carrots, cauliflower, asparagus, peas or green beans, and peultjes but i dunno what that is xD The sauce was pretty good too! I used coconut milk instead of soy cream for the sauce and it worked out good =p


Its snow here now btw =D And pretty cold xD I am also jogging less than at start since i guess its smart to have resting days so legs dont get overworked and dont wanna run >.>

Caramelized almonds

We always make caramelized almonds during xmas at home  =p I got some with me to belgium for xmas but i kinda ate almost all myself and didnt leave much for my bf, so i promised him i would try to make some more =p I kinda ate almost all again though xD Maybe i must make even more =p Still got about 100 gram almonds left ;p

This is the recipe my mom use =p First time i ever tried making them myself @_@

Ingredients:
200 gram almonds
200 gram sugar
2 dl water
2 tablespoons margarine

 Heat the almonds, sugar and water in a pan until it starts boiling, then turn the heat down and simmer until the water is gone. This can take 0,5 - 1 hour or even longer. When the water is evaporized add the margarine and turn heat up again. Stir all the time until the sugar and butter is melted into caramel. Then transfer the caramelized almonds to a baking paper (either using 2 forks to transfer one and one almond, or do like me and pour it all on if you dont care about having nicely seperated almonds xD).

I forgot to turn the heat down after it started boiling so i kinda panicked when all turned into sugary almonds after like 15 minutes or so when all water was evaporized, but i just added margarine and turned heat up again and it melted into caramel after a while ^.^


Its prettier if you use a fork to remove the almonds from the pan, but works to just pour all out too xD

Food from the cooking book project of week 4

Just a reminder, my cooking book project is where i use random number generator to decide pages from all my cooking books, then i try to make most of the recipes from those pages that week =p

First i started off the week with toast with mushrooms. This was yummy, but it would be even yummier if i added plantmilk or cream to the mushrooms i think =p (like my mushroom sauce or the mushrooms i had for my xmas dinner)


Then i had vegetable pilaf, which was also yummy =D I did more vegetables than it normally should be since vegetables rock =p


Then i had tomato risotto =p I'm always too lazy to add a small bit of water and let it boil in, so i just add all at the same time, and it always works out good xD This dish was yummy as well =D


Then i had risotto primavera. Here i used broccoli instead of asparagus (since that's what i had). Lots of yummy vegetables here =D


At the end i had bhuja lentil dish. This one was pretty cool too =D Kinda like lentil-balls in tomatosauce with some beans and carrots  =D


What i didnt make this time was some spinach/rice/pumpkin pie since i didnt have most ingredients and i didnt wanna buy them either xD And i didnt really have time for it either since the bhuja was on sunday so i ran out of days that week =p

So ye, it was a yummy week this week too in my cooking book project even if i ended up with rice half of the week lol.

I really like this cooking book project! Lets me try out lots of new recipes that i otherwise wouldnt have made xP

Oatmeal cookies

These cookies were superyummy! =D

I found the recipe here  

Since it is in cups i'll write it in dl on my blog instead since cups are annoying, and ill also add some changes =p I skipped the icing btw and they are perfectly fine without too =D I also didnt have brown sugar so used white instead, but its probably yummier with brown =p And i replaced the oat flour with whole wheat flour.

Ingredients:
1 tablespoon flaxseeds
1 dl oat flour or whole wheat flour
0.5 teaspoon baking powder
0.25 teaspoon baking soda
0.25 teaspoon salt
0.5 teaspoon ground cinnamon
1 tablespoon vegan margarine, softened
0.5 dl (brown) sugar
0.25 dl sugar
0.25 dl applesauce
0.5 teaspoon vanilla extract
1.5 dl oatmeal
0.5 dl raisins

First make flax mixture by mixing together the flaxseeds with 1.5 tablespoon water and set aside.

Mix together margarine and sugar, then add the flax mixture, applesauce and vanilla and mix it nicely.
 Mix together flour, baking powder, baking soda, salt and cinnamon and add it to the wet mixture.
Add oatmeal and raisins and mix it well.
Make flattened balls from the dough on the baking sheet and bake in oven on 175°C for 10-12 minutes or until cookies starts getting lightly brown on top.

And enjoy (when they have cooled a bit) =D

Mushroom sauce

Time to get this stuff on the blog xD My yammie mushroom sauce! =D

I suddenly forgot how many mushrooms i normally do, but i guess it also depends on the size =p

Ingredients:
Vegetable oil/margarine
0.5 onion
1 clove of garlic
3-5 mushrooms
Plantmilk (recently i used oat milk)
Vegetable stock cube
(corn starch/maizena if needed)

Chop everything that should be chopped in prefered pieces (some like it big, some like it small).
Heat the oil/margarine and saute the mushrooms until they are almost ready.
Add the onion and saute more.
Add the garlic.
Add the milk (as much as you want) and stock cube and let it simmer for like 20 minutes or so.
If you want the sauce to be thinner add more milk, if you want it to be thicker add corn starch.
Home made oat milk is cool since it automatically thickens the sauce by itself xD Dunno if other milks does that too though =p

Bonda

Someone wanted the recipe of bonda from my cooking book project so here it comes =p

This recipe is from the cooking book "Gourmet vegetar" written by Jane Prince.

I did some changes to the recipe though because i dont have whole mustard seeds, curryleaf, coriander plant, chickpea flour, or rice flour, so i had to replace these xD And i also fried in a pan with a little oil and not a bunch of oil like the recipe wanted.


I made recipe for 8 bondas i think if i remember correctly, i think i ended up with more than 8 xD And i ate all myself =p This is what i did (mixed a bit with what says in the book since i dont remember all xD)

Ingredients:
Vegetable oil
0.5 teaspoon mustard
0.5 onion
1 teaspoon fresh ginger, chopped in small pieces
1 teaspoon curry powder
1 green chili, nicely chopped
400 g boiled potatoes, in cubes,
A bit turmeric powder
0.5 tablespoon lemon juice
Coriander powder
Salt
More oil for frying/baking in pan

60 gram flour with 0.25 teaspoon baking powder
0.2 teaspoon turmeric
0.25 teaspoon chili powder
Some salt

(Ps: i added probably more of every spice than i said here and in different ratios xD so taste yourself how you like it before you make them into balls =p i like it spicy and yellow xD)

First set the potatoes to boil if you dont have any boiled potatoes laying around.
Then in a pan (wok it says in book but i dont have that so i used a saucepan or so instead) add oil and bake the onion, ginger and chili for 2 minutes and i think i might have had the mustard and curry in here too or i added it straight after.
Add potatoes, turmeric, 1 ts water, and let it fry for 2 minutes more until it's dry.
Remove the pan from the heat and add lemon juice and coriander and salt. Here you taste on it and spice more with whatever you feel there should be more of. I went a bit amok with the lemon juice so mine ended up tasting lemon xD I also liked the curry and mustard so i think i went a bit amok with them too =p And salt also ofc! I love salt! Could be i also did pepper, but i dont remember anymore.
So after it taste "perfect" then make it into balls using a tablespoon that is filled with much dough and then get your hands dirty by making them into balls xD
I somehow had time to make the flourdough earlier, i think while i was waiting for my potatoes to be ready, but if you havent made it yet, then make it now. Mix flour, baking powder, turmeric, chilipowder, some salt, in a bowl. Then add like 1 dl water a bit at a time until your dough is good. You can taste this dough too and add more of whatever you feel like. I think i wanted mine more yellow if it wasnt yellow enough =p I also did an error here and didnt add enough water (less than what it should be). I guess i made it like i made pancakes, but i like thick pancakes and i should have gone for thin pancakes consistency of the dough.
Dipp the balls in the flourdough so they get covered by the flourdough on all sides.
Fry the bondas in a bunch of oil on 180°C, or if you are like me and dont like to fill a pan full of oil or using a frying machine, then use a pan and fry them in a little oil (kinda tends to be much still since they need refill all the time, but still less than filling a pan @_@). Fry them on every side until they are golden.
Lay them on a paper so the oil can dry off and serve.

Last weeks random food

Last week i was lucky with the random number generator! All the food i made i liked extra much =p

This week i am less lucky since every dish contains rice except for a toast lol xD So will probably be a lot of rice this week xD

But ye, back to last week =p

First i had a moussaka with eggplant and lentils from donderdag veggiedag cookbook =p It was yummy =p I skipped the white (egg/cheese) sauce because i dont eat egg and cheese and i didnt wanna wait another hour for my dinner so i figured it was good enough to be eaten without =p


Then i had bonda (i've never heard of it before xD) from the gourmet book =p This i enjoyed very much!! It's a bit like samosa, so with potatoes and onion and spices with a flour-thingy surrounding it =p So i bet i will make this again more!! =D I just had it in a pan with oil instead of frying it though, and it worked fine! =p


Then i continued with potatogratin with spinach =p I was kinda surpriced how yummy this was!! I used coconut milk instead of cream and skipped the pine nuts and cheese. Luckily i tried to copy the picture by adding salad and tomato on it, since that made it extra yummy =p


Then i had creamy rice pudding from the vidunderlig vegetarmat cookbook. Was kinda annoying that i found out after i started on it that it needed to be 2,5 hours in the oven cuz i was already hungry @_@ I also used some coconut milk in this one even if it didnt say in recipe =p It's kinda different than other rice puddings since it got bit of lemon and nutmeg taste, and its baked in the oven and not in a pan =p


 Then the last day i had pasta and gnocchi (pasta with ovenroasted vegetables and tomatopesto) from the vegetarmat cookbook. This one was pretty yummy as well =D I used lasagne-pasta since i didnt feel like making my own, and i didnt have pine nuts so i used sunflower seeds in the pesto. I also didnt want to kill my basil plant so i used half dry and half fresh basil =p I also should have used more paprika xD The paprika kinda shrinked when i oven-roasted it xD


I didnt make couscous with tuttifrutti from the vegetarish cookbook since i have no idea what tuttifrutti is or where i can find it xD

Now i hope this week will be yummy as well xD Good thing i like rice @_@

Tomato coconut curry leftover dinner

First i just wanna mention my legs still dont wanna run, but they dont mind walking for some reason >.> I wonder why xD

So over to todays dinner =p I had like half a can of tomatoes, 1/4 green chili, 3/4 can of coconut milk and half a broccoli i didnt know how to get rid of, so i figured to just mix it all together and see what happened xD And it actually turned out very well! So if i ever end up with lots of leftover stuff again i will maybe make something like this again =p

I guess the basis of this dinner would be the canned tomatoes, coconut milk, random vegetables and spices where the spices and vegetables can be changed to whatever you feel like or have xD I wanted mine kinda curryish =p

Here is what i used but ye, use what you have or want =p
Margarine/oil
2 mushrooms
1/4 onion
0.5 - 1 cm ginger (i guess its about 1-2 teaspoons xD)
1/4 green chili
1 carrot
1/4 red bell pepper
5 cm zucchini
1/4 broccoli
1 tomato
1/2 can of tomato
1/4 can coconut milk
Spices (no spesific order xd): curry, coriander, mustard, turmeric, cumin, chili, paprika, salt, pepper

I sliced mushrooms in 0.5 cm thick slices then divided them in two on the middle. The mushrooms i had on medium heat with the margarine/oil until they were "ready". Meanwhile i finely chopped the onion, ginger and chili. When the mushrooms were "ready" i added this. It's smart to stir every now and then btw =p The carrots i chopped in 0.5 cm thick circles that i divided on the middle so they became half-moons (i was artistic today xd) then added them, then cut the bell pepper in pieces and added them, then i cutted the zucchini in 0.6 cm thick circles that i divided in 8 pieces and added (artistic ftw xD) then i chopped broccoli and added that and i assume i let it stir for a bit until i felt the vegetables was ready for tomato (some minutes or immediately, i dont remember xD) So then i added can of tomato and chopped the other tomato and added that one too. Then i added coconut milk and let it all simmer for a while. Then i added the spices after taste, and let it simmer until all vegetables were tender =p

I could probably shorten the wall of text above to: "chop and add vegetables!" but that would be boring since im in wall of text writing mood atm =p

Ah now i remember, after spicing it nicely up i figured i would serve it with quinoa, so let it simmer while i made quinoa =p Rice or other stuff would probably work just as fine, but today i felt like using quinoa =p

Now i still need to use the rest of the broccoli, onion, ginger, mushrooms, red bell pepper, 2 kg carrots, 1/2 can coconut milk and the rest of the zucchini xD but i already got plans for some of them (cuz of the cook book project) xD But maybe i make this again to get rid of the rest of the broccoli, cuz that broccoli is "hard" to get rid of and i always wanna get rid of it xD and i always wanna have a broccoli in the house aswell xD im weird xD

Jelly with tumeric (!) sauce

Today when i went to jog my legs didnt wanna jog so i often took walking breaks, and during the walking breaks my legs were happy, but when i jogged they were not =/ So i was jogging superslow with many breaks xD Hope my legs are more happy again tomorrow though, cuz it was annoying to jog like that >.>

Last week i found yummy stuff on Lidl for only 50 cent each =D I bought these:


Those domino cubes were superyummy! Too bad they were sold out the next time i went on Lidl =/ Or maybe not that bad since then i eat less candy xD The chocolate covered marsipan was yummy aswell ofc =p But not as cool as the other one =p Everything gone/eaten in 2 days >.>

One day i also made jelly (i still got some packages from Norway, i dunno if they sell vegan jelly-powder in Belgium). I wanted to have it with vanilla sauce, but after using more than 50 g of vanilla sugar and it still didnt taste anything like vanilla i gave up and figured i'll make it yellow atleast with tumeric xD So ye, it got tumeric taste since i kinda did a bit much tumeric in xD So ye, if your vanilla sugar doesnt work, use tumeric instead to taste the sauce (if you like tumeric and want it yellow xD)


And here is the "vanilla"sugar you shouldnt buy since it doesnt taste like vanilla. I bet they just sell overpriced sugar even if the ingredient list says otherwise! I found it on Colruyt. (It was the cheapest one xD)
