Lille Taste of Indian

I finally got my drivers licence now yay :D (8 years after i could have had it :x)

The driving exam went pretty good, so thats great =p To celebrate me and my family went out to eat at an indian restaurant in Bergen called Lille Taste of Indian, located in Marken =p

I ordered the dish called Degree Channa, with chickpeas, mushrooms and curry sauce. It was served with rice =p They other ordered non-vegan food. It was yummy and had a spiced taste, but without being spicy. I would have liked it a bit more spicy though, but then again I'm kinda unfamiliar with indian food, so I'm not sure how it's supposed to be like xD Think I'll try something different next time though, because it was yummy, but not superyummy for my taste =p



It was a quite cosy place though, and the woman serving us was wearing an indian dress or sari or whatever it's called that was very pretty =p

We had a nice time together, and I like to go out and eat and test out new places and dishes, so I hope we will do it more in the future =D

Curried veggies

This was my dinner today =)


Ingredients i used:
1 tablespoon vegetable oil
0.5 onion, chopped
0.5 garlic, minced (can use 1 too, i had 0.5 leftover from yesterdays hummus)
1 chilipepper, chopped
1 mushroom, in pieces
1 carrot, in pieces
3 small potatoes, in pieces
Some tablespoons of red curry paste
Soy sauce to taste
2 teaspoons tomato paste
Some dl of water
A little bit of leftover chickpeas
Pepper
Freshly squeezed lemon

I sauteed the veggies, adding water when needed, then i added curry paste, tomato paste and soy sauce and some more water and let it simmer a bit before adding chickpeas. When water was more or less evaporated it was ready to eat so i sprinckled on some pepper and freshly squeezed lemon juice =) It's probably yummy with rice, but i figured that out 2 minutes before it was ready to eat, so maybe i should start with boiling some rice next time xD

Broccoli puree with carrots in pasta sauce

This is bit old post, but finally imported picture to pc so now i'll post =p

I wanted to make broccoli puree for some days =p Before i've made broccoli pesto with pasta a couple of times, but now i wanted to use carrots instead of pasta =p So i went into my closets and found some stuff i wanted to use xD Tasted pretty good too so here's the blog about it =p

The measures are +- what i used (i didnt measure), and i ate everything myself xD

Ingredients:
0.5 broccoli, simmered
1 dl green peas, i used frozen so let them thaw with the broccoli
0.5 onion, in slices then in half moons
1 carrot, peeled in strips
Little bit of red bell pepper in pieces
Pasta sauce (i have no idea how much xD)
Mustard to taste =p
1 tomato, in boats
Chickpeas, maybe 1 dl, i used frozen ones, but canned works too
Yoghurt, i used alpro =p maybe some tablespoons
Soy sauce, to taste
Salt
Pepper

Directions:
Simmer broccoli with some of the onion (if you want) until tender (i used like half a slice of the onion), then add peas at the end if they are frozen.
Meanwhile i simmered the remaining onion in some water, then added pasta sauce, peeled carrots, red bell pepper and the tomato. Then i added mustard to taste, and when it was almost done i added chickpeas.
Now the broccoli should be done so i pureed it in my food processor along with some yoghurt. I also added some of the water it boiled with to get a lighter consistency. Then i added soy sauce, salt and pepper and enjoyed =D


Very yummy =D

Pumpkin curry

Since i got myself a pumpkin now it's time to eat it =p (not much else interesting i can do with it xD)


So here's my first pumpkin dish of the year, inspired by the warming curry dish from vegetarbloggen.

I didnt measure anything at all, i just took something. Vegetarbloggen has however measured some stuff if you want measurements =p Also you can add anything you want ofc and how much of each ingredient that you want also.

Ingredients:
Vegan butter (i used alpro which i love =p oil is fine too or just water i guess)
Ginger, chopped
Onion, chopped
Garlic, chopped
Chili, chopped
Mushroom, in pieces, i sliced mine
Carrot, in pieces, i sliced it in rings
Pumpkin, in pieces, i had rectangles
Zucchini,in pieces, i had half moons
Water + vegetable bullion
Coconut milk
Curry powder
Bulgur (mine was whole, but other stuff like rice or so can be used also)
Chickpeas
Cherry tomatoes (or normal ones), in pieces, i cut mine in 4
Salt
Pepper
Coriander powder
Lemon

Heat butter in pan and add ginger, onion, garlic, and chili and saute on medium heat, then add mushroom, carrot, pumpkin and zucchini and saute some more. Add water, bullion, coconut milk, curry, bulgur and bring to a boil. Add chickpeas and cherry tomatoes and simmer on low heat until nice and ready xD Then taste with salt, pepper, coriander and lemon (or add them earlier whenever you feel like it).

Tadaaaa you got yummy dinner ^.^ (sorry for bad picture xD)

Skiengryte

I made this recipe a while ago that i found in VeganMisjonens kokebok on page 33, by the author of veganmisjonen.blogspot.no. The recipe is not on the blog (though there are many other yummy recipes there), so i recommend everyone to buy the book (you can buy it here) =p Many yummy recipes in there, and this one i think was extra yummy! =D

Some of the ingredients in this recipe are onions, zucchini, tomato, bell pepper, sundried tomatos (i love sundried tomatos!!) and chickpeas =p I also added some salad and cucumber with it =p Really superyummy! =D

Cabbage rolls

I bought some cabbage or something (nykàl, dunno correct translation) since someone told me it's very yummy so i wanted to test it out, then i was thinking what to do with it, and i dunno where i came up with the idea, but i kinda wanted to make cabbage rolls, so i searched around on the net to find out how to make something like this (including how to make spring rolls and summer rolls xD). I'm too lazy to link the bunch of sites i visited since i doubt anyone click the links anyway, so i'll just post the recipe =p And yes it's created by me since i didn't really follow any specific recipe, i just looked for inspiration xD I first tried something raw, but figured something was missing and i think that something would be that everything needed to be heated xD So yes, heat it!

The recipe is for what i used/had, if you use other ingredients, or more, or less, or non of something it doesn't really matter i guess =p

Cabbage rolls

Ingredients:
Cabbage leafs (preferable big and whole ones, 1 cabbage leaf for each cabbage roll, i think i used like 3 or 4 xD)
1 carrot, chopped in long, thin pieces like matches
0,5 onion, chopped in long, thin pieces
1 clove garlic, chopped in long, thin pieces
1 dl chickpeas (i used frozen ones, if you use dry ones you must soak them overnight and boil them for a while first)
0,5 dl frozen chopped spinach (i guess fresh chopped spinach works good aswell =p)
Soy sauce to taste
1/4 cucumber, chopped in long, thin pieces
1/4 red bell pepper, chopped in long thin pieces
Fresh basil, chopped

Fry the carrot, onion and garlic in oil until soft, add chickpeas, spinach and soy sauce and stir for a couple of minutes. Take off the heat and add the cucumber, red bell pepper and basil and mix it. You can taste it if it's enough soy sauce, if not, then add more ^.^
Meanwhile heat/boil some water and soak the cabbage leafs for some minutes (maybe 5?) until they are soft.
Try to shake off the water from the cabbage leafs (or just dry them or let them dry) and place the mixture on it and roll it together and eat if they aren't too hot =p Njam njam njam =D

Chana masala

Started to be a while since my last post now because i was a bit busy this week. I worked 4 days (normally i work around 2 days) and then its university too, so my days are kinda busy =p I like sundays though, they are nice to relax on ^.^ but often i feel they just fly away xD

Well, to the point of this post which is recipe of chana masala (i got pics from last sunday/monday when i made it, dont remember which day xD).

This recipe i found here on vegweb (english): Chana masala

Here is what i used, +- the same as if you follow the link xD

Vegetable oil
0,5 onion, chopped
1 clove garlic, minced
0,5 tablespoon curry
Some garam masala
0,5 - 1 dl ketchup
1 - 2 handfulls of chickpeas (i dont really measure, i just pour in, but i guess it is half a can or so)
0,5 box of coconut milk
1/4 - 1/2 tablespoon lemon juice
Salt and fresh (black) pepper
0,5 tablespoon vegan margarin

Boiled rice to serve with.

Here is what i did: Fried onions in the oil until they were nice and shiny, then i added garlic, curry, garam masala, and ketchup. Then i added chickpeas, coconut milk, and lemon juice and let it simmer a bit. Then i added margarine and simmered some more. Then i add salt and pepper and served it with rice =D
