Seems it's been a while since i've posted any food that i've made, so i guess it's time for a little update =p
Yesterday i decided to make pizza since i had bought some out of date pepperoni slices from vbites for half price (and violife cheese since i wanted to put the pepperoni slices on pizza).
I had some leftover yeast too so i also made cinnamon rolls with that, and some without cinnamon because my boyfriend doesn't like cinnamon, but seems he didn't want to taste them either :x I made half portion and dropped the cardamom, but added some vanilla sugar instead. I also used 1/3 whole wheat flour to pretend to be healthy (and used 1/3 extra sugar cuz it fell too much into my measuring cup... so much for being healthy :x). Personally i liked the cinnamon rolls and seems someone else in my boyfriends house also dared to taste (most of the time they don't dare to taste what i make), and they liked it too =) I ate like half of them and i still had half over that i put in the freezer so they wouldn't go dry. It's nicer with my family in Norway, they would have eaten all =p
So to the pizza. This one was kinda fail. First off i used to much whole wheat flour that it is darker than most of the dark breads (i think 50% is when they can call it dark?). The crust kinda tasted like dark bread (healthy ftw xD). Personally i didn't mind, but i think i'll use more white flour next time and less of the whole wheat one xD Secondly, i first baked it too short so the crust tasted like sponge, so i had to bake it more. Thirdly, the crust was glued to the pan, so i kinda had to do some effort to get this dark bread crust loose so i could eat it.
Failures aside it was still yummy =)
I'll be so nice that i'll provide +- recipe too =p
Dough:
2-2.5 dl medium temperature water
0.5 bag of yeast
1 teaspoon sugar
1-2 teaspoon salt
1-2 tablespoons vegetable oil
Some pizza spices and nutritional yeast (optional)
Flour until nice consistency
Mix ingredients, knead it and let it rise for some time (i did some hours), then shape to pizza shape =) Use more flour if needed.
Topping:
Pasta sauce
Shredded vegan cheese (i used violife for pizza, it didn't shred though :x)
Onions
Bell peppers
Pizza spices (i think i used oregano, but it didnt say on the box what it was)
Corn
Canned mushrooms
Vbites pepperoni slices
Tomatos
Nutritional yeast
So i guess basically slice and dice and put on what is wanted =p Started with tomato sauce, then cheese then veggies then more cheese =p Into the oven on max temperature (remember to use something below the dough in the pan or pizza stone :x) until it's ready (which depends on oven temperatue and some other stuff and is hard to know, but 20 minutes in my case wasnt enough xD).
Since only me liked the bread crust i pretended it was bread and added chocospread on it xD
Dark bread is always yummier with chocospread ;)

Pink coconut curry with rice =p
Hihi i love when my food is colored, i should do it more often =D
I made pink coconut curry with rice for breakfast (i sometimes make dinner for breakfast), and i thought it was cute that it was pink, so i decided to post it =p The pinkness comes from the red beet that i added =D
I'm not gonna specify how much of each ingredient i used, and also if anyone wants to make this you can use other ingredients of course =p
Ingredients:
Onion
Garlic
Chili
Red bell pepper
Carrot
Zucchini
Red beet
Cabbage
Celeriac
Coconut milk
Water (i wanted it more liquidish)
Green curry paste (other colors are nice too =p)
Lime juice (i had a little remaining that i wanted to use xD)
Directions:
Chop veggies, stir fry them a bit, add coconut milk, water, curry paste and optionally lime juice and let it simmer for a while. Served with rice or anything else that sounds yummy =p

My lunch today - potato and carrot burgers
Hows it going with everyone?
Here i'm sitting at home trying to get some studying done xD
Just had my lunch, which today was some potato and carrot burgers that i found in a cookbook that i got while i was in school. The book is called "Fra boller til burritos" (from buns to burritos).
I had the burgers along with some lettuce, bell pepper and pastasauce. The pastasauce was from a jar, but mixed with juicing leftovers and some extra spicing xD
Ingredients for the burgers:
1 boiled potato, mashed (mine i guess was medium large)
1 carrot, grated (mine was medium large again =p)
0.25 onion, finely chopped
0.5 tablespoon flour
0.25 dl plant based milk
Salt
Pepper
Mix together the ingredients, form burgers and fry in pan until slightly brown on both sides =)

Lentil pie with red bell pepper and corn
One of the days i made lentil pie with red bell pepper and corn that i found in one of the cookbooks i have (Fingermat/Greatest ever party food, page 84). It was quite yummy and simple, i should make it again =D
Here's what i did.
Ingredients
55g whole wheat flour
25g vegan butter
1 tablespoon water
45g red lentils
0.75 dl vegetable bullion (i used water+cube)
0.25 - 0.5 onion, chopped
0.5 red bell pepper, chopped
0.5 dl corn
1 teaspoon tomato puree
salt
pepper
Start with mixing ingredients for the pie crust. I had to add bit more water to mine. Put it in fridge while making the filling.
For the filling simmer lentils with the veggie bullion, onion, and bell pepper until lentils are ready. Add more water if needed. Add corn, tomato puree, salt and pepper to taste.
Do the pie crust into a mini-pie shape (about 12 cm diameter) and add the filling.
Place in pre-heated oven for about 30 minutes at 200°C. Enjoy ^.^

Broccoli puree with carrots in pasta sauce
This is bit old post, but finally imported picture to pc so now i'll post =p
I wanted to make broccoli puree for some days =p Before i've made broccoli pesto with pasta a couple of times, but now i wanted to use carrots instead of pasta =p So i went into my closets and found some stuff i wanted to use xD Tasted pretty good too so here's the blog about it =p
The measures are +- what i used (i didnt measure), and i ate everything myself xD
Ingredients:
0.5 broccoli, simmered
1 dl green peas, i used frozen so let them thaw with the broccoli
0.5 onion, in slices then in half moons
1 carrot, peeled in strips
Little bit of red bell pepper in pieces
Pasta sauce (i have no idea how much xD)
Mustard to taste =p
1 tomato, in boats
Chickpeas, maybe 1 dl, i used frozen ones, but canned works too
Yoghurt, i used alpro =p maybe some tablespoons
Soy sauce, to taste
Salt
Pepper
Directions:
Simmer broccoli with some of the onion (if you want) until tender (i used like half a slice of the onion), then add peas at the end if they are frozen.
Meanwhile i simmered the remaining onion in some water, then added pasta sauce, peeled carrots, red bell pepper and the tomato. Then i added mustard to taste, and when it was almost done i added chickpeas.
Now the broccoli should be done so i pureed it in my food processor along with some yoghurt. I also added some of the water it boiled with to get a lighter consistency. Then i added soy sauce, salt and pepper and enjoyed =D

Veggie lasagne with fennel sauce
Found a lasagne recipe in one of my cook books (donderdag veggiedag, its in dutch though but i guess nice to have if you know dutch xD). It turned out better than expected (sometimes when i cook from recipes, food comes out bit tasteless, but this one was yummy =p)
So i wanted to share recipe =D This one is bit different from the meaty lasagne that i have on the blog from before, since it doesnt have tomato sauce, and it doesnt have milk sauce =o It also doesnt have "meat" xD This one is just veggies =p I made half a lasagne (so i tell what i used, if you want larger then just double it or quadruple). It lasted for 2 meals (or 2 persons if you are so lucky you have someone to share it with)
Ingredients:
Margarine/oil/both/none xD i used both oil and margarine
0.5 fennel, chopped in small pieces
1 yellow or red bell pepper (recipe said yellow since its supposed to be yellow sauce, but i used red since thats what i had), chopped in small pieces
Water to desired consistency (i also added half a veggie stock cube)
Turmeric (i just added until satisfied xD in recipe its safran though but didnt have that)
Salt and pepper until yammie
1 full tablespoon nutritional yeast (optional)
Lasagne plates (i used 3), boiled so they are soft
Oil/margarine/water
0.5-1 onion (depending on size), chopped
0.5-1 clove garlic, minced
1 red bell pepper, chopped
0.5-1 eggplant (depending on size), in cubes
About 150 g fresh spinach, chopped
Spices (i used basil, oregano, chili, paprika, salt, pepper, onion)
Pine nuts (or in my case sunflower seeds) as decoration
For the sauce:
Saute the fennel and bell pepper, then add water (and stock cube) to cover the veggies and add turmeric and simmer until veggies are tender. Then puree them with a hand mixer or blender or food processor and add more water if needed. Add salt and pepper to taste and nutritional yeast.
For the veggies:
Saute the onion, then add garlic. Add eggplant and bell pepper and saute more until soft. Then add spices to taste, then add spinach and saute until its ready. I also added some water so i didnt have to use shitloads of oil xD
Assembling:
First do a layer of sauce, then veggies, then lasagne plates, then sauce then veggies then lasagne plates etc, and finish it with a layer of sauce, then spread some pine nuts or sunflower seeds on top, and do in oven for about 15 minutes on 180°C.
Enjoy =D I had a salad with mine for extra green, fresh and crispiness
Sorry for bad photos, took them with phone and they looked nicer on that small screen xD But it's the taste that matters for me, not the looks =p

Pizza!
I kinda started eating pizza way more rarely after becoming vegan, mostly because im used to pizzas with meat and cheese, so the carrot pizzas werent really the same xD (+ i mostly had tiny crust and a huuuge layer of filling and no "meat" or "cheese", so wasnt really pro xD). So other food was mostly more tempting.
Ofc there is a bunch of vegan meat and cheese options, im mostly just too lazy to buy it cuz i dont wanna spend too much money so i just didnt make it xD But it really is possible to make any kind of pizza as vegan version as you can see from the menu of this vegan pizzeria Sfizy Veg in Berlin (one day i wanna go there! xd). Why use meat/cheese when you can do a more animal friendly option =D
Well, i got inspired by some blogs to use bearnaise sauce on the pizza, so i wanted to try that. Here are some of the blogposts that inspired me: Brennheit and Harrypizza from veganeren, and the pizza from hverdagsveganeren.
Sadly not all bearnaise sauces are vegan, so check before you buy! In Norway these from Toro are vegan: lett bearnaise sauce (light), and krydder bearnaise sauce (spiced).
So ye, here for the "recipe" aka what i used for this pizza xD But as you all know, you can put whatever you want on pizza =p
Pizza crust/dough (mom always makes pizza saturday evenings so if i want i can have some of the dough so i just used the one she made =p)
Tomato sauce (i just use pasta sauce from jar, but homemade sounds more pro =p)
Pizza spices
Vegan bearnaise sauce with a bit of nutritional yeast (this time i used the spiced one and 2 tablespoons nutritional yeast, next time i will try the light one, nutritional yeast is optional, can skip it too ofc, i also added salt and pepper in it)
Mushrooms (i used canned)
Corn (i used canned)
Pineapple (i used canned)
Green bell pepper
Olives
Sun dried tomatos
Cherry tomatos
Then i putted in oven on 225°C for a while until i felt it was ready xD
It came out very well, so i think i'll make more of this =p It's probably the best pizza i have made for years =D

Scrambled tofu
Pretty easy and yummy stuff to make, and you can use whatever vegetables and spices you have or want to use =p
Here i used about 50-75g tofu (where i squeezed as much water as possible out of it first before i ripped it into small pieces).
First i sauted onion, garlic, carrot and green bell pepper, then i added tofu and spices and soy sauce. The spices i normally use are something like black salt (gives a bit eggy taste), turmeric (yellow ftw), paprika, coriander, cumin, chili, pepper and normal salt if needed.
Then i serve on bread with margarine =p
Perfect breakfast! =D

Tomato coconut curry leftover dinner
First i just wanna mention my legs still dont wanna run, but they dont mind walking for some reason >.> I wonder why xD
So over to todays dinner =p I had like half a can of tomatoes, 1/4 green chili, 3/4 can of coconut milk and half a broccoli i didnt know how to get rid of, so i figured to just mix it all together and see what happened xD And it actually turned out very well! So if i ever end up with lots of leftover stuff again i will maybe make something like this again =p
I guess the basis of this dinner would be the canned tomatoes, coconut milk, random vegetables and spices where the spices and vegetables can be changed to whatever you feel like or have xD I wanted mine kinda curryish =p
Here is what i used but ye, use what you have or want =p
Margarine/oil
2 mushrooms
1/4 onion
0.5 - 1 cm ginger (i guess its about 1-2 teaspoons xD)
1/4 green chili
1 carrot
1/4 red bell pepper
5 cm zucchini
1/4 broccoli
1 tomato
1/2 can of tomato
1/4 can coconut milk
Spices (no spesific order xd): curry, coriander, mustard, turmeric, cumin, chili, paprika, salt, pepper
I sliced mushrooms in 0.5 cm thick slices then divided them in two on the middle. The mushrooms i had on medium heat with the margarine/oil until they were "ready". Meanwhile i finely chopped the onion, ginger and chili. When the mushrooms were "ready" i added this. It's smart to stir every now and then btw =p The carrots i chopped in 0.5 cm thick circles that i divided on the middle so they became half-moons (i was artistic today xd) then added them, then cut the bell pepper in pieces and added them, then i cutted the zucchini in 0.6 cm thick circles that i divided in 8 pieces and added (artistic ftw xD) then i chopped broccoli and added that and i assume i let it stir for a bit until i felt the vegetables was ready for tomato (some minutes or immediately, i dont remember xD) So then i added can of tomato and chopped the other tomato and added that one too. Then i added coconut milk and let it all simmer for a while. Then i added the spices after taste, and let it simmer until all vegetables were tender =p
I could probably shorten the wall of text above to: "chop and add vegetables!" but that would be boring since im in wall of text writing mood atm =p
Ah now i remember, after spicing it nicely up i figured i would serve it with quinoa, so let it simmer while i made quinoa =p Rice or other stuff would probably work just as fine, but today i felt like using quinoa =p

Now i still need to use the rest of the broccoli, onion, ginger, mushrooms, red bell pepper, 2 kg carrots, 1/2 can coconut milk and the rest of the zucchini xD but i already got plans for some of them (cuz of the cook book project) xD But maybe i make this again to get rid of the rest of the broccoli, cuz that broccoli is "hard" to get rid of and i always wanna get rid of it xD and i always wanna have a broccoli in the house aswell xD im weird xD

Now i still need to use the rest of the broccoli, onion, ginger, mushrooms, red bell pepper, 2 kg carrots, 1/2 can coconut milk and the rest of the zucchini xD but i already got plans for some of them (cuz of the cook book project) xD But maybe i make this again to get rid of the rest of the broccoli, cuz that broccoli is "hard" to get rid of and i always wanna get rid of it xD and i always wanna have a broccoli in the house aswell xD im weird xD

Carrot soup
With 2-3 kg carrots laying around, carrot soup seems like the natural thing to make, so i did =p
This time i was too lazy to look around for a recipe, but later while it was boiling i saw that veganmisjonen also had shared a (norwegian) recipe that is more or less the same as mine (i didnt read well through it, i just read its with carrot, onion, and some other ingredients hehehe reading through it now, i see we have like 8 ingredients in common, this is also where i got the idea of adding tumeric and ginger)
Well, here is my recipe:
Ingredients:
0,5 onion, chopped
1 garlic clove, chopped
About 4 carrots, chopped
0,5 - 1 celery stalk, chopped
1 handful chopped leek
1 potato, chopped (i had a spare boiled potato in the fridge, so i added mine along with the water)
0,25 - 0,5 papika/bell pepper (i used yellow one =D)
Vegetable oil
Stock cube
Water
Salt and pepper
Tumeric and ginger powder (optional, i think maybe it's better without, depending on your taste xD)
First heat oil and stir onion, garlic, carrots, celery, potato, and bell pepper until it's nice and shiny xD Then add water until it's covered, leek and stock cube and let it simmer until it's tender. Let it cool down a bit, then blend it together in a blender or food processor. Put it back in the pan and add more water if needed (i needed a lot more water haha), and tumeric and ginger powder if you want that stuff in, and taste with salt and pepper, and let it heat up again before you serve/eat.

Sour smoothie ;(
In today's smoothie i added lemon so it's very sour =p I also added basil, so most of the taste is lemon+basil xD

Cabbage rolls
I bought some cabbage or something (nykĂ l, dunno correct translation) since someone told me it's very yummy so i wanted to test it out, then i was thinking what to do with it, and i dunno where i came up with the idea, but i kinda wanted to make cabbage rolls, so i searched around on the net to find out how to make something like this (including how to make spring rolls and summer rolls xD). I'm too lazy to link the bunch of sites i visited since i doubt anyone click the links anyway, so i'll just post the recipe =p And yes it's created by me since i didn't really follow any specific recipe, i just looked for inspiration xD I first tried something raw, but figured something was missing and i think that something would be that everything needed to be heated xD So yes, heat it!
The recipe is for what i used/had, if you use other ingredients, or more, or less, or non of something it doesn't really matter i guess =p
Cabbage rolls
Ingredients:
Cabbage leafs (preferable big and whole ones, 1 cabbage leaf for each cabbage roll, i think i used like 3 or 4 xD)
1 carrot, chopped in long, thin pieces like matches
0,5 onion, chopped in long, thin pieces
1 clove garlic, chopped in long, thin pieces
1 dl chickpeas (i used frozen ones, if you use dry ones you must soak them overnight and boil them for a while first)
0,5 dl frozen chopped spinach (i guess fresh chopped spinach works good aswell =p)
Soy sauce to taste
1/4 cucumber, chopped in long, thin pieces
1/4 red bell pepper, chopped in long thin pieces
Fresh basil, chopped
Fry the carrot, onion and garlic in oil until soft, add chickpeas, spinach and soy sauce and stir for a couple of minutes. Take off the heat and add the cucumber, red bell pepper and basil and mix it. You can taste it if it's enough soy sauce, if not, then add more ^.^
Meanwhile heat/boil some water and soak the cabbage leafs for some minutes (maybe 5?) until they are soft.
Try to shake off the water from the cabbage leafs (or just dry them or let them dry) and place the mixture on it and roll it together and eat if they aren't too hot =p Njam njam njam =D

Summer soup
Hard to pick name for this soup, but the color reminds me a bit about summer (sunset for example) so i call it summer soup (but you can eat it at all times of the year of course).
This recipe i have made myself by just using random vegetables =p I think it should be for about 1-2 person btw or so, not sure, i just write what i used =p

Ingredients:
1 carrot
0,5 celery
0,5 red bell pepper
1 stock cube
1 dl red lentils
4 dl water
salt and pepper
Cut the ingredients in pieces and boil them for about 10-20 minutes, then do it in the food processor.
Very short and simple soup =p

Veggie-soup
I wanted to use some vegetables to make a soup so i just mixed alot of random stuff =p Its 1 month ago so could be i remember bad xD

Potato
Veggie bullion/stock + as much water you need
Tomato if wanted
Paprika/bell pepper if wanted
Leeks/onion/garlic if wanted (i regret i didnt use onion)
Peas/lentils/beans/pasta if wanted (i used some frozen peas i had xD)
Spinach if wanted (<3 spinach, i used frozen ones)
The spices you want ^.^ for example salt and pepper
Cut the vegetables in pieces and boil it until its tender, then if you want you can do it in a food processor (i did that now, but normally i don't do it). A lot of variation possibilities depending on what you have and like ^.^
This soup tasted like a vitamin bomb or so, probably because of the food processor xD But was also yummy ofc =p

Some dinner i had =p
I've been sick since Sunday now (throat infection or something) so i have been weak and tired, and it hurts in my throat when i swallow, so haven't been posting a lot lately and i haven't been cooking a lot lately either, but i looked through the pictures i have taken earlier and i found a picture of my dinner last Tuesday, so i guess it's time to post it =p
I had been working at a place kinda far away from home (30 min with car or 1 hour 30 min with bus xD), so i asked my bf if he could make some dinner for me, and he cooked up some potatoes and chopped some zucchini and peeled some carrots, so i used that in a mix with onion, bell pepper, cucumber, salad, tomato, and a frozen mix with peas, cauliflower and more carrots. Worked out pretty well with soy sauce on top of course ^.^

Nachos
In the first days of easter vacation my sister had made non-vegan nachos, and after the lasagna success i decided to make vegan nachos ^.^
This time i kinda did measure, but since its 6 days since i made it i kinda forgot all, so could be recipe is bad xD
Nachos
Ingredients:
0,5 - 1 onion
Around 2 gloves of garlic
0,5 - 1 bell pepper (paprika) (optional)
1,5 dl TVP (i think this is what i used xD)
0,5 - 1 vegetable stock (i dont remember what i used)
1 jar of pasta sauce (i know jarsize differ a bit, so take as much or little as you want xD)
0,5 dl (or more) water
Spices, for example basil, oregano etc xD (i think i added cumin and paprika powder and other stuff too xD)
Corn
Tortilla chips
Vegan cheese for topping (optional)
Method:
Fry the onion and garlic until soft and add the bell pepper, TVP mixed with stock, pasta sauce, water and spices and boil for a bit. Put a layer of tortilla chips in a pan (you can spray the pan with oil) and then some corn then a layer of TVP mixture and then more corn and top it with vegan cheese (if i remember correctly i added some olive oil on top also). Bake in oven on 200°C - 225°C for 5-15 minutes (i did 10) until the cheese is melted (if the cheese does it lol).
I did 2 layers, and the tortilla chips ended up soft then so if you want soft tortilla chips then add them in layers but i wont do this again xD I think i will use the white sauce from the lasagna recipe as topping next time, since i liked it and i think it would fit =p So its kinda like nacho-lasagna xD
I will make this again for sure! =D

Ratatouille
It took me a while to find out what to have for breakfast/dinner today, but i finally found out! =D Ratatouille! =D I think it's the first time i make this, but i've made minestrone soup before, which is somewhat similar i think =p
Some days ago i bought zucchini and eggplant since they were cheap (only 19 kr/kg! normally they are 30+ or 40+ xD), and i wanted to use something with these ingredients, so ratatouille is a perfect choice then ^.^
Well here's the recipe that i found on vegetarbloggen (norwegian): Ratatouille

Here's what i did, more or less following the recipe (i also add some ingredients not in the original recipe):
Ingredients:
1 garlic
0,5 onion
0,25 zucchini
0,5 red bell pepper
0,25 eggplant
0,5 carrot (or one small)
1 small potato
0,5 - 1 stalk of celery
Some olive oil
1 small box tomato paste/puree
1 chopped tomato
Around 1 teaspoon sugar
Around 2 teaspoons vinegar
Dried spices: basil, oregano, and whatever other spices i have and wanna add
Salt and pepper
Here is what i did:
I cleaned the vegetables and cutted them in cubes, then i fried them in oil for some minutes until all was nice and shiny, then i added the stock, tomato puree, the chopped tomato and the spices and let it boil. Then i added the sugar and vinegar and let it boil more until the vegetables were tender. Then i added salt and pepper to taste.
And the result:
Yammie! =D
I hope they will have zucchini and eggplant in promotion the following week too ;D

Twisted ancle xD and more =p
This week on wednesday i twisted my ancle during aikido training (i fell wrong xD). I think it's the 2nd time that i twist my ancle/foot (first time was at school when i was 6-10 years old or so, so i dont remember much from it xD). It was a bit painful, but not so much, so i continued the aikido training like if nothing had happened xD The day after i went to school like normal and walk/run like i normally do, and when i came home, my ancle had grown (swollen up) ALOT xD it was just like a big big "balloon" xD Still not so painful, mostly annoying =p Friday the swelling got less again and today its even better so i think it will soon be fully cured =p I think it was a pretty light twist, but i dont really have alot of experience to compare with so i dont know =p This summer i twisted my tumb when i fell on the bike, and that was worse xD then i couldnt use the thumb like normal for some days/weeks and it was more painful xD
Well, enough about twisting xD i just find it kinda fasinating to be (lightly) injured xD (says something about how little i got injured in the past xD)
This week i found something vegan in shop that i havent eaten in a looooooooong time: Bourbon cookies!!! =D They used to have them on Lidl, and i loved them! But Lidl left norway many years ago =( The bourbon cookies i found was a bit different from the Lidl ones, but they were still yummy, but now i want the Lidl ones rofl xD Maybe time to do some internet shopping? xD
