My Xmas 2015

Yoyo everybody, merry xmas! =D

I'm still alive, even though it doesnt seem like it from my posting frequencies xD

So yesterday i celebrated xmas with my family. As usual norwegian tradition i made xmas rice pudding or whatever it's called in english for lunch, made with porridge rice, soy + coconut milk, vanilla powder, sugar, and grounded almons. With cinnamon, raisins and vegan margarine on top =p Very delicious =D


They got a new vegan margarine in Norway now that was actually whiter than my rice pudding as you can see on the picture, which i found a bit funny, cuz normally the margarine/butter is yellow =p
Also my vegan rice pudding was darker in color than my families non-vegan rice pudding =p


After eating we visited my grandparents for a short while before we drove back home (or i drove back home because i'm training for my driving licence). Then i prepared the nut roast that i would have for dinner. I used the recipe that i always use on veg-veg their sites, except i used some more nuts, regretting i didn't make even more =p Guess i'll write the ingredients on my blog so i have it here for later =p

Ingredients:
200 g mixed nuts (i used cashews, brazil nuts, almonds, peanuts, walnuts)
100 g crumbled bread
1 chopped onion
2 chopped garlic cloves
1 tablespoon vegetable oil
2 tablespoons flour
1 tablespoon spice mix (i used paprika, cloves, ginger, pepper, chili, garlic, nutmeg)
1 cube vegetable bullion
1,5 dl boiling water
salt and pepper

So i did the nuts and bread in my food processor until it was chopped into pieces, sauted the onion and garlic in the oil, then i added all the ingredients in a bowl and spiced it as much as i wanted, then did it in an oiled bread shape, covered with aluminium foil, and baked in the oven on 180°C for about 1 hour.

Next to the nutroast i had boiled potatoes, brown sauce, mashed rutabaga, mushrooms, onions, brussel sprouts, and lots of soy sauce =p


After eating we opened the presents.

Here's what i got:



A purse, 2 different cooking books, vegan chocolate, tvp chuncks, mini cake shapes, touchscreen gloves, lavendel smelling candle light, hand soap, sweater, pizza pan, circular glass shape, power plug thingy, huge pillow and cash =p

Pretty nice gifts, i'm very happy for all of them =D

After opening gifts we wanted to watch the movie "The Holiday". Sadly we didn't have the dvd in our house, so we tried streaming it. Sadly internet wasn't in a very cooperating mood (slow and falling out), so we could watch about 10 minutes before we had to load it for like 5 minutes to continue watching it, so we only got 49 minutes into the movie before we gave up xD

It was a nice xmas for me and i got a lot of cool stuff that i wanted, yummy food, and i had a nice time together with my family =D I hope everyone else had a nice xmas aswell =D

Shepherdess Pie

So, time for a recipe again =p I had some leftover boiled potatoes, onion, tomato, carrots, cauliflower and chinese cabbage that needed to be used in the fridge, along with some freshly purchased, boiled and frozen black eyed beans in the freezer, so that sounds pretty much like a shepherdess pie to me (except it's normally made with lentils as far as i know xD) I didn't really measure or follow any recipe (but i looked at some recipes for inspiration), but just added what seemed to be a reasonable amount of each ingredient (typically the remaining of what i had laying around) xD


Ingredients (with +- my use in paranthesis):

Tomato sauce:
Onion (+- 0.5)
Garlic (1 clove)
Tomato (+- 1/4th cuz that's what i had, would have used more if i had more =p)
Carrot (2)
Cauliflower (+- 1/2 kinda small)
Chinese cabbage (+- 1/3 small)
Black eyed beans (+- 1,5 dl, other beans or lentils can also be used)
Canned tomatoes (1 400g can)
Tomato paste (+- 1 tablespoon)
Sugar (+- 2 teaspoons)
Bullion cube (1)
Spices (i used pizza spice, oregano, thyme, paprika, fresh basil, salt)
Water if needed

Mashed potatoes:
Boiled potatoes (i had like bit less than 500 g maybe?)
Vegan margarine (1-2 tablespoons)
Plant milk (i used oat milk, dunno howmuch though)
Salt and pepper

Chop veggies in small pieces, saute them and add canned tomatoes, tomato paste, bullion cube, sugar and spices (i added my basil at the end). Add water if needed. Simmer for a while then add beans (add earlier if not cooked). Make mashed potaoes (i guess everyone knows how to). Taste if they both taste good and add more salt or spices if needed. Pour the tomato sauce in an ovenproof dish and distribute the mashed potatoes on top. Here you can have some vegan cheese on top for extra yumminess =p Into the oven on 200°C for like 20 minutes or more =)

Curried veggies

This was my dinner today =)


Ingredients i used:
1 tablespoon vegetable oil
0.5 onion, chopped
0.5 garlic, minced (can use 1 too, i had 0.5 leftover from yesterdays hummus)
1 chilipepper, chopped
1 mushroom, in pieces
1 carrot, in pieces
3 small potatoes, in pieces
Some tablespoons of red curry paste
Soy sauce to taste
2 teaspoons tomato paste
Some dl of water
A little bit of leftover chickpeas
Pepper
Freshly squeezed lemon

I sauteed the veggies, adding water when needed, then i added curry paste, tomato paste and soy sauce and some more water and let it simmer a bit before adding chickpeas. When water was more or less evaporated it was ready to eat so i sprinckled on some pepper and freshly squeezed lemon juice =) It's probably yummy with rice, but i figured that out 2 minutes before it was ready to eat, so maybe i should start with boiling some rice next time xD

Pink coconut curry with rice =p

Hihi i love when my food is colored, i should do it more often =D
I made pink coconut curry with rice for breakfast (i sometimes make dinner for breakfast), and i thought it was cute that it was pink, so i decided to post it =p The pinkness comes from the red beet that i added =D

I'm not gonna specify how much of each ingredient i used, and also if anyone wants to make this you can use other ingredients of course =p

Ingredients:
Onion
Garlic
Chili
Red bell pepper
Carrot
Zucchini
Red beet
Cabbage
Celeriac
Coconut milk
Water (i wanted it more liquidish)
Green curry paste (other colors are nice too =p)
Lime juice (i had a little remaining that i wanted to use xD)

Directions:
Chop veggies, stir fry them a bit, add coconut milk, water, curry paste and optionally lime juice and let it simmer for a while. Served with rice or anything else that sounds yummy =p

Mushroom sauce

Time to get this stuff on the blog xD My yammie mushroom sauce! =D

I suddenly forgot how many mushrooms i normally do, but i guess it also depends on the size =p

Ingredients:
Vegetable oil/margarine
0.5 onion
1 clove of garlic
3-5 mushrooms
Plantmilk (recently i used oat milk)
Vegetable stock cube
(corn starch/maizena if needed)

Chop everything that should be chopped in prefered pieces (some like it big, some like it small).
Heat the oil/margarine and saute the mushrooms until they are almost ready.
Add the onion and saute more.
Add the garlic.
Add the milk (as much as you want) and stock cube and let it simmer for like 20 minutes or so.
If you want the sauce to be thinner add more milk, if you want it to be thicker add corn starch.
Home made oat milk is cool since it automatically thickens the sauce by itself xD Dunno if other milks does that too though =p

Carrot soup

With 2-3 kg carrots laying around, carrot soup seems like the natural thing to make, so i did =p

This time i was too lazy to look around for a recipe, but later while it was boiling i saw that veganmisjonen also had shared a (norwegian) recipe that is more or less the same as mine (i didnt read well through it, i just read its with carrot, onion, and some other ingredients hehehe reading through it now, i see we have like 8 ingredients in common, this is also where i got the idea of adding tumeric and ginger)

Well, here is my recipe:

Ingredients:
0,5 onion, chopped
1 garlic clove, chopped
About 4 carrots, chopped
0,5 - 1 celery stalk, chopped
1 handful chopped leek
1 potato, chopped (i had a spare boiled potato in the fridge, so i added mine along with the water)
0,25 - 0,5 papika/bell pepper (i used yellow one =D)
Vegetable oil
Stock cube
Water
Salt and pepper
Tumeric and ginger powder (optional, i think maybe it's better without, depending on your taste xD)

First heat oil and stir onion, garlic, carrots, celery, potato, and bell pepper until it's nice and shiny xD Then add water until it's covered, leek and stock cube and let it simmer until it's tender. Let it cool down a bit, then blend it together in a blender or food processor. Put it back in the pan and add more water if needed (i needed a lot more water haha), and tumeric and ginger powder if you want that stuff in, and taste with salt and pepper, and let it heat up again before you serve/eat.

Cabbage rolls

I bought some cabbage or something (nykĂ l, dunno correct translation) since someone told me it's very yummy so i wanted to test it out, then i was thinking what to do with it, and i dunno where i came up with the idea, but i kinda wanted to make cabbage rolls, so i searched around on the net to find out how to make something like this (including how to make spring rolls and summer rolls xD). I'm too lazy to link the bunch of sites i visited since i doubt anyone click the links anyway, so i'll just post the recipe =p And yes it's created by me since i didn't really follow any specific recipe, i just looked for inspiration xD I first tried something raw, but figured something was missing and i think that something would be that everything needed to be heated xD So yes, heat it!

The recipe is for what i used/had, if you use other ingredients, or more, or less, or non of something it doesn't really matter i guess =p

Cabbage rolls

Ingredients:
Cabbage leafs (preferable big and whole ones, 1 cabbage leaf for each cabbage roll, i think i used like 3 or 4 xD)
1 carrot, chopped in long, thin pieces like matches
0,5 onion, chopped in long, thin pieces
1 clove garlic, chopped in long, thin pieces
1 dl chickpeas (i used frozen ones, if you use dry ones you must soak them overnight and boil them for a while first)
0,5 dl frozen chopped spinach (i guess fresh chopped spinach works good aswell =p)
Soy sauce to taste
1/4 cucumber, chopped in long, thin pieces
1/4 red bell pepper, chopped in long thin pieces
Fresh basil, chopped

Fry the carrot, onion and garlic in oil until soft, add chickpeas, spinach and soy sauce and stir for a couple of minutes. Take off the heat and add the cucumber, red bell pepper and basil and mix it. You can taste it if it's enough soy sauce, if not, then add more ^.^
Meanwhile heat/boil some water and soak the cabbage leafs for some minutes (maybe 5?) until they are soft.
Try to shake off the water from the cabbage leafs (or just dry them or let them dry) and place the mixture on it and roll it together and eat if they aren't too hot =p Njam njam njam =D

Couscous with tomato and basil

Having a lot of pics of stuff i already made and didn't have time to post yet (more correctly is i didn't spend my time to post it xD time i had a lot of xD)

This dish i often make since it's so easy and yummy! Sometimes i do mushrooms with it as well if i have mushrooms that needs to be used. Then i chop mushroom and fry it a bit before i add the rest.

The recipe i found here on vegweb, but i don't really measure it anymore (but i use about 0,5+ dl couscous, 1 dl water, 1(or more) clove of garlic and 1 tomato, 0,5 vegetable stock, and a lot of basil xD), and i never added parsley (since we didn't have that and later i just forgot it was in the recipe). So thanks to the author for this very simple and yummy recipe! =D

Couscous with Tomato and Basil

Ingredients i use:

    1 teaspoon vegetable or olive oil
    1 clove garlic, minced
    1 tablespoons dried basil
    1 dl water with 0.5 cube of vegetable stock
    0.5 dl couscous
    1 chopped tomato
   salt and pepper to taste

Directions:

Heat oil and cook garlic until softened. Add water, basil and stock cube and bring to a boil. Add couscous and put off the heat. Let it rest for some minutes until couscous is soft. Add chopped tomato, salt and pepper and enjoy =)

Veggie-soup

I wanted to use some vegetables to make a soup so i just mixed alot of random stuff =p Its 1 month ago so could be i remember bad xD

Veggie-soup

Celery
Carrot
Potato
Veggie bullion/stock + as much water you need
Tomato if wanted
Paprika/bell pepper if wanted
Leeks/onion/garlic if wanted (i regret i didnt use onion)
Peas/lentils/beans/pasta if wanted (i used some frozen peas i had xD)
Spinach if wanted (<3 spinach, i used frozen ones)
The spices you want ^.^ for example salt and pepper

Cut the vegetables in pieces and boil it until its tender, then if you want you can do it in a food processor (i did that now, but normally i don't do it). A lot of variation possibilities depending on what you have and like ^.^

This soup tasted like a vitamin bomb or so, probably because of the food processor  xD But was also yummy ofc =p

Samosa

I like samosas a lot, but they take a while to make (specially since i'm slow and take many breaks xD) so it's not so often i make it =p The vegetables in it can be varied from what you have and like i think =)

So here's the recipe copy-pasted from here: Samosa

Vegetable Samosa Filling

1 Potato finely diced (5 to 10 mill cubes)
1 carrot finely diced - as above
2 cloves of crushed garlic.
1 Onion finely chopped
1 Cup of frozen peas
1 tblspn vegetable oil
2 tspn curry powder or your own spices according to taste
Salt, Pepper to taste.
100ml of vegetable stock.
Heat the oil in a frying pan, add the onion and garlic, mix in  the spices and fry until soft. Add the vegetables, seasoning and stir well until coated. Add the stock, cover and simmer for 30 minutes until cooked.
Now it's time for the pastry.

Making the Samosa Pastry

You don't have to make your own pastry. You can simply buy some ready-made pastry from the shop. For samosas you want to fry, use Filo Pastry and for samosas you want to cook in the oven use Puff Pastry.
This recipe will make enough pastry for 24 samosas and you will need:
225gm. plain flour
2 tspn. salt
2tblspb. vegetable oil
80 ml warm water.
Mix flour and salt into a bowl. Make a well into the centre and add the oil and enough water to make a firm dough. Knead the dough on a floured surface until smooth and roll into a ball. Cover in plastic wrap and set aside at room temperature for 30 minutes.
Divide the pastry into 12 equal pieces. Roll each piece into a ball and roll out into a circle of 15 cm. Divide this circle into two equal pieces with a knife.
Brush each edge with a little water and form a cone shape around your fingers, sealing the dampened edge.
Fill the cases with a tblpns of your chosen mixture and press the two dampened edges together to seal the top of the cone.
Deep fry the samosas in hot oil until crisp and brown take out and drain on a paper towel.

Nachos

In the first days of easter vacation my sister had made non-vegan nachos, and after the lasagna success i decided to make vegan nachos ^.^

This time i kinda did measure, but since its 6 days since i made it i kinda forgot all, so could be recipe is bad xD

Nachos

Ingredients:
0,5 - 1 onion
Around 2 gloves of garlic
0,5 - 1 bell pepper (paprika) (optional)
1,5 dl TVP (i think this is what i used xD)
0,5 - 1 vegetable stock (i dont remember what i used)
1 jar of pasta sauce (i know jarsize differ a bit, so take as much or little as you want xD)
0,5 dl (or more) water
Spices, for example basil, oregano etc xD (i think i added cumin and paprika powder and other stuff too xD)
Corn
Tortilla chips
Vegan cheese for topping (optional)

Method:
Fry the onion and garlic until soft and add the bell pepper, TVP mixed with stock, pasta sauce, water and spices and boil for a bit. Put a layer of tortilla chips in a pan (you can spray the pan with oil) and then some corn then a layer of TVP mixture and then more corn and top it with vegan cheese (if i remember correctly i added some olive oil on top also). Bake in oven on 200°C - 225°C for 5-15 minutes (i did 10) until the cheese is melted (if the cheese does it lol).


I did 2 layers, and the tortilla chips ended up soft then so if you want soft tortilla chips then add them in layers but i wont do this again xD I think i will use the white sauce from the lasagna recipe as topping next time, since i liked it and i think it would fit =p So its kinda like nacho-lasagna xD


I will make this again for sure! =D

Chana masala

Started to be a while since my last post now because i was a bit busy this week. I worked 4 days (normally i work around 2 days) and then its university too, so my days are kinda busy =p I like sundays though, they are nice to relax on ^.^ but often i feel they just fly away xD

Well, to the point of this post which is recipe of chana masala (i got pics from last sunday/monday when i made it, dont remember which day xD).

This recipe i found here on vegweb (english): Chana masala

Here is what i used, +- the same as if you follow the link xD

Vegetable oil
0,5 onion, chopped
1 clove garlic, minced
0,5 tablespoon curry
Some garam masala
0,5 - 1 dl ketchup
1 - 2 handfulls of chickpeas (i dont really measure, i just pour in, but i guess it is half a can or so)
0,5 box of coconut milk
1/4 - 1/2 tablespoon lemon juice
Salt and fresh (black) pepper
0,5 tablespoon vegan margarin

Boiled rice to serve with.

Here is what i did: Fried onions in the oil until they were nice and shiny, then i added garlic, curry, garam masala, and ketchup. Then i added chickpeas, coconut milk, and lemon juice and let it simmer a bit. Then i added margarine and simmered some more. Then i add salt and pepper and served it with rice =D



I wanna make this today too! I love it! =D <3

Thai tomatosoup

Recently i found a recipe on a blog that i wanted to try: Thai tomatosoup

This soup was very yummy, so i will make it again later ^.^

So ye, heres the recipe, translated by me, but not written by me =p Credit goes to the author of the recipe ^.^

 

Thailandsk tomatsuppe

1 onion
2 cloves garlic
some fresh ginger
1 box chopped tomatoes
1 teaspoon chili powder
1 box coconut milk
1 tablespoon sugar
salt
some oil

* Chop onion, garlic and ginger and fry it for 5 minutes.
* Mix it with the rest of the ingredients, stir well, then let it boil (at this point the coconut milk gave me a huge urge to put curry in it as well, so i did that xD).
* When it just started boiling, pour the soup in a food processor until its smooth.
* Put the soup back in the pan and let it boil for 5 minutes. If the soup is too thick you can add some water.

Zucchini burgers

Today i wanted to make something (new) with zucchini for dinner since i have some zucchinis in my fridge, so i searched on the internet and found this recipe: Zucchini Patties that i found on vegweb.

I'm not so good on following recipes though, so i mixed it with the amazingly yummy mexican burgers from veganmisjonen her blog (the recipe is removed so i cant link to it anymore, but it kinda use beans and not zucchini).

The end result: Yummy!! =D

I didn't really measure carefully, its kinda like take what you got/want xD I guess this credit goes to the vegweb recipe, veganmisjonens recipe, and my mixing together skills xD


Zucchini burgers

Ingredients:
0,5 - 1 grated zucchini (i had like 0,5 left)
0,5 - 1 onion, finely chopped (i used 0,5)
1 clove garlic, minced
1 box of mushrooms (fresh ones might work as well, or you can skip it completely or use more or less =p i only had boxed mushrooms, my boxes are pretty small btw)
0,5 box of corn (if you have/want/like it xD we had some (around 0,25 box) spare in the fridge so i just added it xD you can skip it aswell)
Some parsley, or in my case i used spring onion, or leek could work as well, or you can skip it xD (="green stuff" in the method below)
Dried oregano (and maybe some other spices if you like, for example basil, coriander, chili, paprika/bell pepper (i think actually fresh one would rock! xD), cumin, or other stuff, add what you have/want/like =p)
0,5 - 1 vegetable stock cube (i used 0,5)
Salt and pepper to taste
Oatmeal or bread crumbs (i used oat meal, i think maybe 0,5 - 1 dl depending on how wet your mix is, i didnt measure, i just added)
Flour (to make it stick together better, just add till its nice consistency)


Method (if its still needed since most of it is in my ingredient list Oo)
Add the grated zucchini, the chopped onion and the minced garlic together in a bowl and add the box of mushroom and the corn and the green stuff and the spices and the stock and the salt and pepper and mix together at the end or in between (i did in between =p). Add the oatmeal or bread crumbs and the flour until you got nice consistency. Fry them in a pan with oil on medium heat on both sides till they are ready ^.^

  

Since they were so yummy i ate almost all myself! xD But i guess its better sharing on 2 or more people, specially if you have a side-dish with it =p

I kinda liked it more with zucchini than with beans, since its more "fresh" taste then (if i remember correctly xD), so i think its time to put zucchini on my regular shopping list =p If you don't have zucchini you can use beans instead, for example kidney beans =p

Vegan lasagna

Some days ago i found a recipe of vegan lasagna here, so i wanted to test it out! I haven't eaten lasagna for some years now (except for a vegetable lasagna that kinda failed since it didn't taste so good xD), so it was cool tasting "normal" lasagna again! =D It failed a bit though since the lasagna plates weren't cooked good so they were still hard, so next time i will use more water in the recipe and hope they cook then, or cook them longer =p I also got empty of the white sauce at the end, so i had to make a bit more =p And i skipped the pine nuts, and added basil and oregano in the TVP mixture for more taste ^.^ (for those who don't know, TVP = textured vegetable protein, the kind i used was TVP mince which is mince consistency, but there are chunk(ball) consistencies also but i think mince fits the most in this recipe)

Meaty Lasagne

Difficulty: Medium
Serves Four


Ingredients
  • 2 1/2 cups TVP
  • 3 stock cubes (i used vegetable stock cubes ^.^)
  • 1 tablespoon minced garlic
  • 1 small red onion, finely chopped (other colors should work aswell xD)
  • 2/3 to 1 large jar of tomato pasta sauce (+spices like oregano and basil if you want ^.^)
  • 1/3 cup vegan margarine/butter
  • 1/4 cup plain flour
  • 1/2 cup soy milk
  • 3 large sheets of instant lasagne (oh shit it needed to be instant? xD that explains why mine weren't cooked xD)
  • Salt and pepper to taste
  • Handful of pine nuts (can be skipped =p)
Method
  1. Preheat oven to 180°C
  2. Prepare the TVP as per packaging and crumble in the stock cubes, mix well.
  3. In a large frypan, fry the onion and garlic until onion starts to turn translucent.
  4. Add the TVP mixture and combine well, keep stirring over the heat for about 3 minutes.
  5. Throw in the pasta sauce, you should base how much you used on your personal preference. (and maybe some water also if your mixture is pretty "dry" =p)
  6. Set the TVP mixture aside and melt the margarine in the microwave.
  7. With a fork, whisk in the flour and microwave for a further 1 minute. (lol after 10-20 sec mine was boiling like hell, so be careful with this =p)
  8. Whisk in the soy milk until the sauce is creamy.
  9. Add salt and pepper to taste (add some garlic too if you’d like)
  10. In a greased 8×8 oven-proof dish, add a layer of the TVP mixture to the bottom followed by 1 1/2 of the lasagne sheets. Chuck a layer of white sauce, then more TVP, then lasagne, then TVP and finish it off with a nice thick layer of white sauce.
  11. Sprinkle with pine nuts and bake for about 20 minutes.




Hope you enjoy ;) i did for sure! xD Now gotta buy more TVP though, but i think i will test it out with red lentils maybe, that might work as well =p

Refried beans

Today i had pita with refried beans for dinner =p

For the refried beans i used this recipe: Refried beans from this blog: http://veganeren.blogspot.com/ (many good recipes there! =D)

Since the recipe is on Norwegian i will translate it here. All the credits for this recipe goes to the creator, not to me =D


Refried beans
1 medium size chopped onion
2-3 chopped garlic cloves
1 box of kidneybeans in "sauce"/brine (the water they are in, don't do the water away =p)
Spices (for example cumin, pepper, chili, cayenne pepper, paprika, coriander, basil, oregano, salt, soy sauce, etc, whatever you want, this is what i used =p)

Fry the onion a bit in oil, then add the beans with sauce/brine and the spices and mix well. Let it boil for about 15 minutes until the water thingy is almost boiled away, then mash the beans a bit (not totally), and serve, for example with nachos or in pita/taco/tortilla etc, whatever you want.

Buljong rice with fried vegetables

Finally a recipe that i made myself and didn't "steal" from someone else their blog lol xD Was kinda kev (my bf) who made it first but i'll just say its mine (since i make it the most rofl xD)

It can be made with different vegetables btw =p Like this time i added cauliflower, but normally i use without =p


Buljong rice with fried vegetables


Rice:
Rice (normally i use 0,5 - 1 dl for each person)
Water (2* - 3* the amount of rice =p for 0,5 dl i used 1,5 dl water, but it doesn't have to be so accurate =p)
Vegetable buljong/stock =p (for making yummy rice =D)
Spinach (can be omitted =p i use frozen spinach btw for extra color of the rice, but kev doesn't like this so sometimes i skip the spinach =p xD)

Vegetables:
Potato (i normally use 1 medium one for each person)
Carrot (again i use 1 medium one for each person, or so the potato-carrot ratio seems nice xD)
Broccoli (i add so its nicely color with the potato and carrot xD i guess maybe 1/4-1/8 of a broccoli?)
Onion (i guess 0,5/person)
Garlic (1 clove/person xD i love garlic! xD)
Oil
Basil spice =p
Soy sauce



Procedure:
Boil the rice with the water, buljong/stock and the spinach if you want it greenish untill rice is ready (i guess most need 15-20 min, if water dry up before its ready then add some more water =p).
The potato should be boiled, i normally use the microwave for this: i remove the outer layer of the potato and stab it a bit with a fork, then i put it on a plate and in the microwave for like 15-30 sec on each side on medium to high temperature (i don't put it in water, so i guess boiling is a wrong term?).
Cut the vegetables in pieces (like 1 cm cubes or bit less maybe) and fry them in oil =p I normally add them like they come and not all at the same time, so first carrot, then potato/broccoli, and then onion when the rest is almost done, and then garlic last =p
When all vegetables are added, then i spice it a bit with basil =p (<3 basil!!) Then tadaaaa ready ^.^ Then i put the rice and vegetables on my plate and add some soy sauce on top, then nom nom nom ^.^


On the pics i have cauliflower too, so if you want this in as well then just add it with the broccoli =p

Ratatouille

It took me a while to find out what to have for breakfast/dinner today, but i finally found out! =D Ratatouille! =D I think it's the first time i make this, but i've made minestrone soup before, which is somewhat similar i think =p

Some days ago i bought zucchini and eggplant since they were cheap (only 19 kr/kg! normally they are 30+ or 40+ xD), and i wanted to use something with these ingredients, so ratatouille is a perfect choice then ^.^

Here's what i did, more or less following the recipe (i also add some ingredients not in the original recipe):

Ingredients:
1 garlic
0,5 onion
0,25 zucchini
0,5 red bell pepper
0,25 eggplant
0,5 carrot (or one small)
1 small potato
0,5 - 1 stalk of celery
Some olive oil
    5+ dl water + 1-2 vegetable stock cubes
    1 small box tomato paste/puree
    1 chopped tomato
    Around 1 teaspoon sugar
    Around 2 teaspoons vinegar
    Dried spices: basil, oregano, and whatever other spices i have and wanna add
    Salt and pepper

    Here is what i did:

    I cleaned the vegetables and cutted them in cubes, then i fried them in oil for some minutes until all was nice and shiny, then i added the stock, tomato puree, the chopped tomato and the spices and let it boil. Then i added the sugar and vinegar and let it boil more until the vegetables were tender. Then i added salt and pepper to taste.
