Food from the cooking book project of week 4

Just a reminder, my cooking book project is where i use random number generator to decide pages from all my cooking books, then i try to make most of the recipes from those pages that week =p

First i started off the week with toast with mushrooms. This was yummy, but it would be even yummier if i added plantmilk or cream to the mushrooms i think =p (like my mushroom sauce or the mushrooms i had for my xmas dinner)


Then i had vegetable pilaf, which was also yummy =D I did more vegetables than it normally should be since vegetables rock =p


Then i had tomato risotto =p I'm always too lazy to add a small bit of water and let it boil in, so i just add all at the same time, and it always works out good xD This dish was yummy as well =D


Then i had risotto primavera. Here i used broccoli instead of asparagus (since that's what i had). Lots of yummy vegetables here =D


At the end i had bhuja lentil dish. This one was pretty cool too =D Kinda like lentil-balls in tomatosauce with some beans and carrots  =D


What i didnt make this time was some spinach/rice/pumpkin pie since i didnt have most ingredients and i didnt wanna buy them either xD And i didnt really have time for it either since the bhuja was on sunday so i ran out of days that week =p

So ye, it was a yummy week this week too in my cooking book project even if i ended up with rice half of the week lol.

I really like this cooking book project! Lets me try out lots of new recipes that i otherwise wouldnt have made xP

Oatmeal cookies

These cookies were superyummy! =D

I found the recipe here  

Since it is in cups i'll write it in dl on my blog instead since cups are annoying, and ill also add some changes =p I skipped the icing btw and they are perfectly fine without too =D I also didnt have brown sugar so used white instead, but its probably yummier with brown =p And i replaced the oat flour with whole wheat flour.

Ingredients:
1 tablespoon flaxseeds
1 dl oat flour or whole wheat flour
0.5 teaspoon baking powder
0.25 teaspoon baking soda
0.25 teaspoon salt
0.5 teaspoon ground cinnamon
1 tablespoon vegan margarine, softened
0.5 dl (brown) sugar
0.25 dl sugar
0.25 dl applesauce
0.5 teaspoon vanilla extract
1.5 dl oatmeal
0.5 dl raisins

First make flax mixture by mixing together the flaxseeds with 1.5 tablespoon water and set aside.

Mix together margarine and sugar, then add the flax mixture, applesauce and vanilla and mix it nicely.
 Mix together flour, baking powder, baking soda, salt and cinnamon and add it to the wet mixture.
Add oatmeal and raisins and mix it well.
Make flattened balls from the dough on the baking sheet and bake in oven on 175°C for 10-12 minutes or until cookies starts getting lightly brown on top.

And enjoy (when they have cooled a bit) =D

Mushroom sauce

Time to get this stuff on the blog xD My yammie mushroom sauce! =D

I suddenly forgot how many mushrooms i normally do, but i guess it also depends on the size =p

Ingredients:
Vegetable oil/margarine
0.5 onion
1 clove of garlic
3-5 mushrooms
Plantmilk (recently i used oat milk)
Vegetable stock cube
(corn starch/maizena if needed)

Chop everything that should be chopped in prefered pieces (some like it big, some like it small).
Heat the oil/margarine and saute the mushrooms until they are almost ready.
Add the onion and saute more.
Add the garlic.
Add the milk (as much as you want) and stock cube and let it simmer for like 20 minutes or so.
If you want the sauce to be thinner add more milk, if you want it to be thicker add corn starch.
Home made oat milk is cool since it automatically thickens the sauce by itself xD Dunno if other milks does that too though =p

Bonda

Someone wanted the recipe of bonda from my cooking book project so here it comes =p

This recipe is from the cooking book "Gourmet vegetar" written by Jane Prince.

I did some changes to the recipe though because i dont have whole mustard seeds, curryleaf, coriander plant, chickpea flour, or rice flour, so i had to replace these xD And i also fried in a pan with a little oil and not a bunch of oil like the recipe wanted.


I made recipe for 8 bondas i think if i remember correctly, i think i ended up with more than 8 xD And i ate all myself =p This is what i did (mixed a bit with what says in the book since i dont remember all xD)

Ingredients:
Vegetable oil
0.5 teaspoon mustard
0.5 onion
1 teaspoon fresh ginger, chopped in small pieces
1 teaspoon curry powder
1 green chili, nicely chopped
400 g boiled potatoes, in cubes,
A bit turmeric powder
0.5 tablespoon lemon juice
Coriander powder
Salt
More oil for frying/baking in pan

60 gram flour with 0.25 teaspoon baking powder
0.2 teaspoon turmeric
0.25 teaspoon chili powder
Some salt

(Ps: i added probably more of every spice than i said here and in different ratios xD so taste yourself how you like it before you make them into balls =p i like it spicy and yellow xD)

First set the potatoes to boil if you dont have any boiled potatoes laying around.
Then in a pan (wok it says in book but i dont have that so i used a saucepan or so instead) add oil and bake the onion, ginger and chili for 2 minutes and i think i might have had the mustard and curry in here too or i added it straight after.
Add potatoes, turmeric, 1 ts water, and let it fry for 2 minutes more until it's dry.
Remove the pan from the heat and add lemon juice and coriander and salt. Here you taste on it and spice more with whatever you feel there should be more of. I went a bit amok with the lemon juice so mine ended up tasting lemon xD I also liked the curry and mustard so i think i went a bit amok with them too =p And salt also ofc! I love salt! Could be i also did pepper, but i dont remember anymore.
So after it taste "perfect" then make it into balls using a tablespoon that is filled with much dough and then get your hands dirty by making them into balls xD
I somehow had time to make the flourdough earlier, i think while i was waiting for my potatoes to be ready, but if you havent made it yet, then make it now. Mix flour, baking powder, turmeric, chilipowder, some salt, in a bowl. Then add like 1 dl water a bit at a time until your dough is good. You can taste this dough too and add more of whatever you feel like. I think i wanted mine more yellow if it wasnt yellow enough =p I also did an error here and didnt add enough water (less than what it should be). I guess i made it like i made pancakes, but i like thick pancakes and i should have gone for thin pancakes consistency of the dough.
Dipp the balls in the flourdough so they get covered by the flourdough on all sides.
Fry the bondas in a bunch of oil on 180°C, or if you are like me and dont like to fill a pan full of oil or using a frying machine, then use a pan and fry them in a little oil (kinda tends to be much still since they need refill all the time, but still less than filling a pan @_@). Fry them on every side until they are golden.
Lay them on a paper so the oil can dry off and serve.

Last weeks random food

Last week i was lucky with the random number generator! All the food i made i liked extra much =p

This week i am less lucky since every dish contains rice except for a toast lol xD So will probably be a lot of rice this week xD

But ye, back to last week =p

First i had a moussaka with eggplant and lentils from donderdag veggiedag cookbook =p It was yummy =p I skipped the white (egg/cheese) sauce because i dont eat egg and cheese and i didnt wanna wait another hour for my dinner so i figured it was good enough to be eaten without =p


Then i had bonda (i've never heard of it before xD) from the gourmet book =p This i enjoyed very much!! It's a bit like samosa, so with potatoes and onion and spices with a flour-thingy surrounding it =p So i bet i will make this again more!! =D I just had it in a pan with oil instead of frying it though, and it worked fine! =p


Then i continued with potatogratin with spinach =p I was kinda surpriced how yummy this was!! I used coconut milk instead of cream and skipped the pine nuts and cheese. Luckily i tried to copy the picture by adding salad and tomato on it, since that made it extra yummy =p


Then i had creamy rice pudding from the vidunderlig vegetarmat cookbook. Was kinda annoying that i found out after i started on it that it needed to be 2,5 hours in the oven cuz i was already hungry @_@ I also used some coconut milk in this one even if it didnt say in recipe =p It's kinda different than other rice puddings since it got bit of lemon and nutmeg taste, and its baked in the oven and not in a pan =p


 Then the last day i had pasta and gnocchi (pasta with ovenroasted vegetables and tomatopesto) from the vegetarmat cookbook. This one was pretty yummy as well =D I used lasagne-pasta since i didnt feel like making my own, and i didnt have pine nuts so i used sunflower seeds in the pesto. I also didnt want to kill my basil plant so i used half dry and half fresh basil =p I also should have used more paprika xD The paprika kinda shrinked when i oven-roasted it xD


I didnt make couscous with tuttifrutti from the vegetarish cookbook since i have no idea what tuttifrutti is or where i can find it xD

Now i hope this week will be yummy as well xD Good thing i like rice @_@

Tomato coconut curry leftover dinner

First i just wanna mention my legs still dont wanna run, but they dont mind walking for some reason >.> I wonder why xD

So over to todays dinner =p I had like half a can of tomatoes, 1/4 green chili, 3/4 can of coconut milk and half a broccoli i didnt know how to get rid of, so i figured to just mix it all together and see what happened xD And it actually turned out very well! So if i ever end up with lots of leftover stuff again i will maybe make something like this again =p

I guess the basis of this dinner would be the canned tomatoes, coconut milk, random vegetables and spices where the spices and vegetables can be changed to whatever you feel like or have xD I wanted mine kinda curryish =p

Here is what i used but ye, use what you have or want =p
Margarine/oil
2 mushrooms
1/4 onion
0.5 - 1 cm ginger (i guess its about 1-2 teaspoons xD)
1/4 green chili
1 carrot
1/4 red bell pepper
5 cm zucchini
1/4 broccoli
1 tomato
1/2 can of tomato
1/4 can coconut milk
Spices (no spesific order xd): curry, coriander, mustard, turmeric, cumin, chili, paprika, salt, pepper

I sliced mushrooms in 0.5 cm thick slices then divided them in two on the middle. The mushrooms i had on medium heat with the margarine/oil until they were "ready". Meanwhile i finely chopped the onion, ginger and chili. When the mushrooms were "ready" i added this. It's smart to stir every now and then btw =p The carrots i chopped in 0.5 cm thick circles that i divided on the middle so they became half-moons (i was artistic today xd) then added them, then cut the bell pepper in pieces and added them, then i cutted the zucchini in 0.6 cm thick circles that i divided in 8 pieces and added (artistic ftw xD) then i chopped broccoli and added that and i assume i let it stir for a bit until i felt the vegetables was ready for tomato (some minutes or immediately, i dont remember xD) So then i added can of tomato and chopped the other tomato and added that one too. Then i added coconut milk and let it all simmer for a while. Then i added the spices after taste, and let it simmer until all vegetables were tender =p

I could probably shorten the wall of text above to: "chop and add vegetables!" but that would be boring since im in wall of text writing mood atm =p

Ah now i remember, after spicing it nicely up i figured i would serve it with quinoa, so let it simmer while i made quinoa =p Rice or other stuff would probably work just as fine, but today i felt like using quinoa =p

Now i still need to use the rest of the broccoli, onion, ginger, mushrooms, red bell pepper, 2 kg carrots, 1/2 can coconut milk and the rest of the zucchini xD but i already got plans for some of them (cuz of the cook book project) xD But maybe i make this again to get rid of the rest of the broccoli, cuz that broccoli is "hard" to get rid of and i always wanna get rid of it xD and i always wanna have a broccoli in the house aswell xD im weird xD

Jelly with tumeric (!) sauce

Today when i went to jog my legs didnt wanna jog so i often took walking breaks, and during the walking breaks my legs were happy, but when i jogged they were not =/ So i was jogging superslow with many breaks xD Hope my legs are more happy again tomorrow though, cuz it was annoying to jog like that >.>

Last week i found yummy stuff on Lidl for only 50 cent each =D I bought these:


Those domino cubes were superyummy! Too bad they were sold out the next time i went on Lidl =/ Or maybe not that bad since then i eat less candy xD The chocolate covered marsipan was yummy aswell ofc =p But not as cool as the other one =p Everything gone/eaten in 2 days >.>

One day i also made jelly (i still got some packages from Norway, i dunno if they sell vegan jelly-powder in Belgium). I wanted to have it with vanilla sauce, but after using more than 50 g of vanilla sugar and it still didnt taste anything like vanilla i gave up and figured i'll make it yellow atleast with tumeric xD So ye, it got tumeric taste since i kinda did a bit much tumeric in xD So ye, if your vanilla sugar doesnt work, use tumeric instead to taste the sauce (if you like tumeric and want it yellow xD)


And here is the "vanilla"sugar you shouldnt buy since it doesnt taste like vanilla. I bet they just sell overpriced sugar even if the ingredient list says otherwise! I found it on Colruyt. (It was the cheapest one xD)

Jogging and the cooking book project xD

I guess some of you might wonder how my jogging is going.

In my opinion it's going pretty good, but i found out that i jog at the same speed as people walk fast xD But i'll work on my condition first then the speed later, since it's no point in running fast for 20 meters or so then be totally out of breath (like i normally did when i was running to the bus xD)

Last week i also started warming up and cooling off by walking a bit before i start jogging and after i finished. I don't know if it helps or not, but i guess it can't hurt to walk some extra =p

One of the days i jogged for about 8.2 km in 1 hour and 2 minutes =p Dunno if that's good or bad, but for someone who never really was active i guess it's good =D The other days i normally do somewhere between 4.5 and 6 km with jogging if im not doing other active stuff for a day like walking or biking because then i'm often too lazy to jog which i guess is fair, like the day i was shopping for 3 hours xD Got myself a headband and a jogging top + foods from that =D

Lately i've been trying to take less walking breaks and jog for longer time, so i guess i maybe reached my 10 minute goal of jogging without breaks =p But it still sometimes feel like im trying to run in water since i feel resistance in my legs (they wanna walk, not jog xD)


And then to the cooking book project! I'm too lazy to post recipes but if you want some of them just tell and i'll post it =p I guess it might be possible to read the recipe from the pictures too if you understand the language xD

So after the tomato pasta i made nasi goreng from the cooking book "Vegetar mat". I kinda made the sauce too thin though, but i guess it was still good xD



Then i made roasted chickpeas from the book "Gourmet vegetar". I roasted mine in the oven instead of frying them like the recipe said but i never got them like i wanted so i gave up and just ate them =p (they were still good though xD)



Then i made lentil bolognese from the cooking book "Vidunderlig vegetarmat". I like spaghetti bolognese from vegweb more though =D But this recipe has more vegetables in, which i guess is a good thing =p



Then i made an indish dish with aubergine, tomatoes and peas from the cook book "Donderdag veggiedag kookboek". Here i had an accident with the peas and half the bag went in xD



 I didnt make anything from the last book "Vegetarisch". I guess the recipes in that book are a bit different than what i wanna make xD


Interesting to try new recipes atleast! =D And extra cool since a random number generator picked the recipes xD And ye, i dont have any english cook books and no vegan ones either >.> It's on my wish list though ;)

Oat milk

I decided to save some money and make my own milk since all the cheap milks taste like vanilla and it's not really that good with mushroom-vanilla sauce for dinner =p

Since i'm lazy, the choise fell on oat milk since that takes less than 5 minutes to make and is supereasy =p

I researched on internet and found a recipe here on how to make oatmilk, but they also add random stuff that would make it sweeter and stuff, and since i just wanted plain milk i simply skip them =p

So here is my simple recipe:
1 dl oats
5 dl cold water

Blend together in a blender for some minutes or so (i tried foodprocessor once, that didnt work as well as my blender xD) then seperate the oats from the water/milk, for example with a cheesecloth or something. I use this since that is what i have, it comes some more oats in my milk but i dont really care =p Then i put it in a tight container (tomatosauce glass or so xD) and store it in the fridge until i use it. I guess it survives some days in the fridge =p Remeber to shake the container before using, because it becomes seperated =p


The leftover oats i eat with some sugar and cinnamon btw =p but you can also use it in baked stuff or possibly skip seperating them =p I didnt really try drinking this milk so i have no idea what it taste like either xD For drinking i guess some sweetener would be nice to have in =p

Warning: When heated, it will get thicker, so i dont need to add maizena to my sauce to thicken it for example =p But if you arent supposed to make a thick warm milky thing i guess it would be smarter to use something else xD I'm curious what the result would be if i made cocoa with it or so @_@ maybe chocolate pudding!!! =D

Todays dinner, tomatopasta xD

I guess time to start taking more pic of my food and actually add it fast into pc so i feel like blogging about it xD

Since i have a bunch of cooking books laying around (all vegetarian, no vegan =s) i decided to use my friend random number generator to generate a number, then i open all the cooking books on that side/number and pick the book/recipe that i wanna make the most (or have/know most of the ingredients of xD). Then i lay away the cooking book with a note in for that side so i can easily find my recipe, and generate a new number and choose one of the other recipes/books and lay it away and continue doing this until all the cooking books have a recipe to make xD I told myself i only need to do 3 of them each week though, else all my days are occupied by recipes already, and some of the recipes need like 10 ingredients i dont have, so not so fun then xD

Dunno if i will continue doing it, but i guess i should use the books more and not just let them sit unopened in the closet xD

So ye, first day i picked to make tomatopasta page 134 in the book "Verdens beste vegetar-retter" since i had most of the ingredients and was too lazy to go to shop and wanted a quick and easy meal =p

I did some changes though since i dont have balsamico vinegar and i dont eat cheese and dont have any vegan cheese. I also used lemon juice on bottle and not from a real lemon xD I was also too lazy to measure most of the ingredients, so heres what i used xD

Ingredients:
1 tablespoon olive oil
0,5 - 1 tablespoon soy sauce (since i didnt have balsamico vinegar and i have no idea what it taste xD)
0,5 teaspoon vinegar (wondering if vinegar could replace balsamico vinegar xD)
0,5 - 1 tablespoon lemon juice
Some fresh and some dry basil
Salt and pepper
1 tomato, chopped
Pasta, i assume its around 100g per person? i think i used 80 or so though =p

So i mixed the wet stuff + salt + pepper, then i added chopped tomato and let it mix or something while the pasta was boiling. Then when pasta was ready drained off the water of the pasta and added the pasta to the tomatothingy and mixed it and ate =p


I wonder what balsamico vinegar taste like xD This is a lunch meal btw, so im still hungry >.> Which means i can eat something more!! =D

New Year's Resolution

Maybe it's a bit late to post it now, but i'll do it anyway =p I guess it's kinda normal to find something you wanna change about your life for the new year, so i figured that i would do it as well =p

Since i probably wont be healthier in eating (im a food addict >.>) i decided to skip that as a new year resolution and rather train more =p

That isnt really that hard since my normal training in norway used to be running to the bus xD In the spring 2011 i also did aikido which is an awesome martial arts where the short version is that you throw people on the ground without hurting them in self defence =p Perfect for people who think martial arts are cool but dont wanna hurt anyone or get hurt by anyone or likes non-violence (like me) =p

So my plan now is to jog 30+ minutes or around 5 km +- 1 km almost every day =p

My condition is pretty bad atm since i get tired after very short time and have to walk then, but i hope to train that up so i can run for 10 minutes or more without breaks =D

Hope i can keep up the jogging through whole 2012 and the rest of my life =p

What are your new years resolution if you have any? =p Need some more comments on this blog, it looks so dead xD

Boller

This recipe i got from my mom who got it from her mom =p

Ingredients
50 gram fresh yeast or 1 bag of dry yeast
150 gram margarine
1/2 liter plantmilk
1 1/2 dl. sugar
1 teaspoon salt
1 teaspoon cardemom
Ca 15 dl flour

I also add vanillasugar, raisins, and possibly tumeric to make them yellow (mostly thats for 13th december though xD)

Melt the margarine and add the milk, heat it up to around 30-37°C or so, but not too high temperature because then you kill the yeast. I usually test with a finger in it, if i burn myself it's too hot =p If you use fresh yeast lose it up in the margarine/milk mixture, if you use dry yeast add it with the dry ingredients. Add all wet and dry together and mix well. Put aside on a warm place (but not too warm; dont wanna kill the yeast!!) for 1-1.5 hours so it raised to double size or so. Form into whatever shapes you wanna, for example cinnamon rolls or spheres and set aside more for it to grow more.

Bake in oven on 225°C for 10-15 minutes until nice and golden color.

If they are like the picture below they have been in the oven for too long =p


Here tumeric is added to make them yellow for the lucia-day (13th dec). These are nice and golden color like they should be (mom made them), and not black like the above ones when i made them xD


And here are some with 1/3 whole wheat flour, that also were not burnt =)
