Vegan meeting at Pygmalion March 2016

The norwegian vegan society arranges vegan meetings the first sunday of every month in a restaurant. This sunday we were in Pygmalion, which is a cosy ecological restaurant in Bergen. They have several vegan options here and i struggled with what to order because of the many choices and i'm really sucky at making decisions. I ended up with a delicious vegan burger, served with hummus and baked potatoes. Other vegan options they had were soup, wrap, wok, salad, and cake. The burger patty is made with lentils and this dinner was quite filling. I kinda wanted ketchup with it as well (they have available), but i was too lazy to go get it or to ask the waiter to go get it for me =p


We were quite many people at this vegan meeting. Probably like 50 or so =p I stayed there to 19, and then there were only 4 people left other than me =p I met old and new people, had some nice chats, and delicious food =D I'm a bit sick atm though, having a cold, so i hope i didn't spread my sickness to any other people (although i probably did and they all will be sick now because of me :x)

Anyways, it was nice getting out of the house and meet some fellow vegans. Looking forward to next time =D

My Xmas 2015

Yoyo everybody, merry xmas! =D

I'm still alive, even though it doesnt seem like it from my posting frequencies xD

So yesterday i celebrated xmas with my family. As usual norwegian tradition i made xmas rice pudding or whatever it's called in english for lunch, made with porridge rice, soy + coconut milk, vanilla powder, sugar, and grounded almons. With cinnamon, raisins and vegan margarine on top =p Very delicious =D


They got a new vegan margarine in Norway now that was actually whiter than my rice pudding as you can see on the picture, which i found a bit funny, cuz normally the margarine/butter is yellow =p
Also my vegan rice pudding was darker in color than my families non-vegan rice pudding =p


After eating we visited my grandparents for a short while before we drove back home (or i drove back home because i'm training for my driving licence). Then i prepared the nut roast that i would have for dinner. I used the recipe that i always use on veg-veg their sites, except i used some more nuts, regretting i didn't make even more =p Guess i'll write the ingredients on my blog so i have it here for later =p

Ingredients:
200 g mixed nuts (i used cashews, brazil nuts, almonds, peanuts, walnuts)
100 g crumbled bread
1 chopped onion
2 chopped garlic cloves
1 tablespoon vegetable oil
2 tablespoons flour
1 tablespoon spice mix (i used paprika, cloves, ginger, pepper, chili, garlic, nutmeg)
1 cube vegetable bullion
1,5 dl boiling water
salt and pepper

So i did the nuts and bread in my food processor until it was chopped into pieces, sauted the onion and garlic in the oil, then i added all the ingredients in a bowl and spiced it as much as i wanted, then did it in an oiled bread shape, covered with aluminium foil, and baked in the oven on 180°C for about 1 hour.

Next to the nutroast i had boiled potatoes, brown sauce, mashed rutabaga, mushrooms, onions, brussel sprouts, and lots of soy sauce =p


After eating we opened the presents.

Here's what i got:



A purse, 2 different cooking books, vegan chocolate, tvp chuncks, mini cake shapes, touchscreen gloves, lavendel smelling candle light, hand soap, sweater, pizza pan, circular glass shape, power plug thingy, huge pillow and cash =p

Pretty nice gifts, i'm very happy for all of them =D

After opening gifts we wanted to watch the movie "The Holiday". Sadly we didn't have the dvd in our house, so we tried streaming it. Sadly internet wasn't in a very cooperating mood (slow and falling out), so we could watch about 10 minutes before we had to load it for like 5 minutes to continue watching it, so we only got 49 minutes into the movie before we gave up xD

It was a nice xmas for me and i got a lot of cool stuff that i wanted, yummy food, and i had a nice time together with my family =D I hope everyone else had a nice xmas aswell =D

Shepherdess Pie

So, time for a recipe again =p I had some leftover boiled potatoes, onion, tomato, carrots, cauliflower and chinese cabbage that needed to be used in the fridge, along with some freshly purchased, boiled and frozen black eyed beans in the freezer, so that sounds pretty much like a shepherdess pie to me (except it's normally made with lentils as far as i know xD) I didn't really measure or follow any recipe (but i looked at some recipes for inspiration), but just added what seemed to be a reasonable amount of each ingredient (typically the remaining of what i had laying around) xD


Ingredients (with +- my use in paranthesis):

Tomato sauce:
Onion (+- 0.5)
Garlic (1 clove)
Tomato (+- 1/4th cuz that's what i had, would have used more if i had more =p)
Carrot (2)
Cauliflower (+- 1/2 kinda small)
Chinese cabbage (+- 1/3 small)
Black eyed beans (+- 1,5 dl, other beans or lentils can also be used)
Canned tomatoes (1 400g can)
Tomato paste (+- 1 tablespoon)
Sugar (+- 2 teaspoons)
Bullion cube (1)
Spices (i used pizza spice, oregano, thyme, paprika, fresh basil, salt)
Water if needed

Mashed potatoes:
Boiled potatoes (i had like bit less than 500 g maybe?)
Vegan margarine (1-2 tablespoons)
Plant milk (i used oat milk, dunno howmuch though)
Salt and pepper

Chop veggies in small pieces, saute them and add canned tomatoes, tomato paste, bullion cube, sugar and spices (i added my basil at the end). Add water if needed. Simmer for a while then add beans (add earlier if not cooked). Make mashed potaoes (i guess everyone knows how to). Taste if they both taste good and add more salt or spices if needed. Pour the tomato sauce in an ovenproof dish and distribute the mashed potatoes on top. Here you can have some vegan cheese on top for extra yumminess =p Into the oven on 200°C for like 20 minutes or more =)

Halloween 2014

I love holidays, they give a good opportunity to celebrate =D

As always, halloween is a time for spookiness =D And gross (but still yummy) food =D

So for this years meny i chose to eat mummies, larvaes, blood, and gore ^.^


Followed by way too much candy (and also before and while making the dinner xD)


And some chips and popcorn too =p

I even made some green spooky muffins with some bugs, brains and other nasty stuff in it, but everyone was too full to eat, including me :x


I dressed up as a witch who had been in a witchfight xD


In the evening we watched a movie called the collector. This movie had too much torture and blood and stuff so i was watching computer screen instead luckily, else i would have nightmares still. My brother and sister weren't the biggest fan of it either, but they wanted to know how it ended so they kept watching. I read the summary on wikipedia instead, gave me enough info, without all the visual details :x

Was a nice halloween, looking forward to next years halloween already =D

Curried veggies

This was my dinner today =)


Ingredients i used:
1 tablespoon vegetable oil
0.5 onion, chopped
0.5 garlic, minced (can use 1 too, i had 0.5 leftover from yesterdays hummus)
1 chilipepper, chopped
1 mushroom, in pieces
1 carrot, in pieces
3 small potatoes, in pieces
Some tablespoons of red curry paste
Soy sauce to taste
2 teaspoons tomato paste
Some dl of water
A little bit of leftover chickpeas
Pepper
Freshly squeezed lemon

I sauteed the veggies, adding water when needed, then i added curry paste, tomato paste and soy sauce and some more water and let it simmer a bit before adding chickpeas. When water was more or less evaporated it was ready to eat so i sprinckled on some pepper and freshly squeezed lemon juice =) It's probably yummy with rice, but i figured that out 2 minutes before it was ready to eat, so maybe i should start with boiling some rice next time xD

My lunch today - potato and carrot burgers

Hows it going with everyone?

Here i'm sitting at home trying to get some studying done xD

Just had my lunch, which today was some potato and carrot burgers that i found in a cookbook that i got while i was in school. The book is called "Fra boller til burritos" (from buns to burritos).

I had the burgers along with some lettuce, bell pepper and pastasauce. The pastasauce was from a jar, but mixed with juicing leftovers and some extra spicing xD

Ingredients for the burgers:
1 boiled potato, mashed (mine i guess was medium large)
1 carrot, grated (mine was medium large again =p)
0.25 onion, finely chopped
0.5 tablespoon flour
0.25 dl plant based milk
Salt
Pepper

Mix together the ingredients, form burgers and fry in pan until slightly brown on both sides =)

Today for dinner: veggieballs (from veg-veg.no *norwegian*) with salad, tzatziki and oven roasted cherry tomatos (on 200°C for i dunno how long xD).

Veggie soup with pumpkin

Made a pumpkin polenta dish yesterday but forgot to take picture so i'll write about todays dinner instead =p

This dish is kinda like add everything from the closets/fridge that you want, so i'll just say what i used then you can add what you want, like and have available =D

Ingredients
1 small onion, chopped in pieces
A tablespoon ginger or so, chopped in small pieces
0.5 chili in small pieces
1 carrot, in rings
2 small potatoes in pieces
1 small red beet in pieces
1 bunch of pumpin, in pieces (i wanted more pumpkin than i used xD pumpkin rocks! =D)
Leeks (think mine was 15 cm or so) in rings
Broccoli in pieces (i used 2 florets but probably yummier with more)
Water
Veggie bullion
A handful bulgur
A handful red lentils
A tablespoon or 2 of tomato paste
Lots of spices to taste, i used fennel, ginger, paprika, cayenne pepper, black pepper, coriander, spaghetti spice, turmeric, mint, oregano
I also added a little bit of noodles at the end =p

Directions: Chop veggies and bring to boil with water and veggie bullion. Add bulgur, lentils, spices, tomato paste, and simmer until veggies and stuffs are ready. Add noodles and simmer until they are ready. Enjoy =p

Carrot curry soup

Last weekend i was at the vacation house of my parents together with my sweet boyfriend since i had free from work both saturday and sunday, so we came there friday evening and went back sunday. On the saturday we went out on a little trip with the boat of my parents =p Most of the other time we were just chilling, and we were lucky it was nice weather all the time (except raining in the night).

We needed to eat something before leaving on sunday, so i decided to make carrot soup. More specifically carrot curry soup =p It turned out pretty good so gonna share recipe =p

Here's ingredients i used:
1 onion
3 large carrots
4 mini potatoes (i guess its about 2 medium-large ones)
0.5 red bell pepper
1 tomato
Water
1 vegetable stock cube
0.5 can coconut milk (1 can = 400 ml)
Curry powder to taste
Salt
Pepper

Directions:
Chop all the veggies into pieces and add them in a pan with a little water in the bottom (or oil) and saute it until all veggies are added and a little soft. Then add water so it covers the veggies and add stock cube and bring to a boil. When the veggies are soft, pure them with a hand mixer or blender.
Add coconut milk, curry powder, salt, pepper to taste, and more water until wanted consistency.
You can also add some coconut milk when serving to get it some more decorative.

Chili sin carne

This used to be my favorite dish =D

I dont remember exactly how much i use of everything, normally i do so the ratio looks more or less good and taste if it needs more of something xD

Well, heres the ingredients (from memory):
0,5 medium-small onion, chopped
1 clove garlic, chopped
Some chili, chopped (optional)
2 small potatoes, in cubes
0.5 red bell pepper, in cubes
Paprika/chili powder
1 vegetable bullion cube
Around 3 dl water (i dont remember how much i use, i just add something, and depends how liquid you want it, i just add more water if i feel its needed)
Basil spice, oregano spice (i normally use shitloads xd)
+- 250g (0.5 jar) pastasauce
0.5 can of kidneybeans

Saute the onion, garlic, potatoes, chili and red bell pepper. Add the paprika/chili powder, water, bullion cube and basil/oregano and let it boil for 5-10 min. Add the pasta sauce, then add the kidneybeans and let it boil bit more. And always remember to taste meanwhile if you need more of something =p

Bonda

Someone wanted the recipe of bonda from my cooking book project so here it comes =p

This recipe is from the cooking book "Gourmet vegetar" written by Jane Prince.

I did some changes to the recipe though because i dont have whole mustard seeds, curryleaf, coriander plant, chickpea flour, or rice flour, so i had to replace these xD And i also fried in a pan with a little oil and not a bunch of oil like the recipe wanted.


I made recipe for 8 bondas i think if i remember correctly, i think i ended up with more than 8 xD And i ate all myself =p This is what i did (mixed a bit with what says in the book since i dont remember all xD)

Ingredients:
Vegetable oil
0.5 teaspoon mustard
0.5 onion
1 teaspoon fresh ginger, chopped in small pieces
1 teaspoon curry powder
1 green chili, nicely chopped
400 g boiled potatoes, in cubes,
A bit turmeric powder
0.5 tablespoon lemon juice
Coriander powder
Salt
More oil for frying/baking in pan

60 gram flour with 0.25 teaspoon baking powder
0.2 teaspoon turmeric
0.25 teaspoon chili powder
Some salt

(Ps: i added probably more of every spice than i said here and in different ratios xD so taste yourself how you like it before you make them into balls =p i like it spicy and yellow xD)

First set the potatoes to boil if you dont have any boiled potatoes laying around.
Then in a pan (wok it says in book but i dont have that so i used a saucepan or so instead) add oil and bake the onion, ginger and chili for 2 minutes and i think i might have had the mustard and curry in here too or i added it straight after.
Add potatoes, turmeric, 1 ts water, and let it fry for 2 minutes more until it's dry.
Remove the pan from the heat and add lemon juice and coriander and salt. Here you taste on it and spice more with whatever you feel there should be more of. I went a bit amok with the lemon juice so mine ended up tasting lemon xD I also liked the curry and mustard so i think i went a bit amok with them too =p And salt also ofc! I love salt! Could be i also did pepper, but i dont remember anymore.
So after it taste "perfect" then make it into balls using a tablespoon that is filled with much dough and then get your hands dirty by making them into balls xD
I somehow had time to make the flourdough earlier, i think while i was waiting for my potatoes to be ready, but if you havent made it yet, then make it now. Mix flour, baking powder, turmeric, chilipowder, some salt, in a bowl. Then add like 1 dl water a bit at a time until your dough is good. You can taste this dough too and add more of whatever you feel like. I think i wanted mine more yellow if it wasnt yellow enough =p I also did an error here and didnt add enough water (less than what it should be). I guess i made it like i made pancakes, but i like thick pancakes and i should have gone for thin pancakes consistency of the dough.
Dipp the balls in the flourdough so they get covered by the flourdough on all sides.
Fry the bondas in a bunch of oil on 180°C, or if you are like me and dont like to fill a pan full of oil or using a frying machine, then use a pan and fry them in a little oil (kinda tends to be much still since they need refill all the time, but still less than filling a pan @_@). Fry them on every side until they are golden.
Lay them on a paper so the oil can dry off and serve.

Carrot soup

With 2-3 kg carrots laying around, carrot soup seems like the natural thing to make, so i did =p

This time i was too lazy to look around for a recipe, but later while it was boiling i saw that veganmisjonen also had shared a (norwegian) recipe that is more or less the same as mine (i didnt read well through it, i just read its with carrot, onion, and some other ingredients hehehe reading through it now, i see we have like 8 ingredients in common, this is also where i got the idea of adding tumeric and ginger)

Well, here is my recipe:

Ingredients:
0,5 onion, chopped
1 garlic clove, chopped
About 4 carrots, chopped
0,5 - 1 celery stalk, chopped
1 handful chopped leek
1 potato, chopped (i had a spare boiled potato in the fridge, so i added mine along with the water)
0,25 - 0,5 papika/bell pepper (i used yellow one =D)
Vegetable oil
Stock cube
Water
Salt and pepper
Tumeric and ginger powder (optional, i think maybe it's better without, depending on your taste xD)

First heat oil and stir onion, garlic, carrots, celery, potato, and bell pepper until it's nice and shiny xD Then add water until it's covered, leek and stock cube and let it simmer until it's tender. Let it cool down a bit, then blend it together in a blender or food processor. Put it back in the pan and add more water if needed (i needed a lot more water haha), and tumeric and ginger powder if you want that stuff in, and taste with salt and pepper, and let it heat up again before you serve/eat.

Broccoli-potato-carrot burgers

I've been having a lot of broccoli that i had problems getting rid of lately (actually it was 1 big broccoli xD), and since i also bought 2 kg carrots today (on top of the 1 kg i already have) and had some leftover boiled potatoes in the fridge, i decided to try to make broccoli-potato-carrot burgers =p And they turned out great! (except for that the first batch was too soft since i didnt use maizenna in them, more flour might have been able to fix it aswell)

I took inspiration from the recipe of broccoli brugers that are on veganmisjonen her blog (here is link to my blog that got link further to her blog haha).

Like always i didnt really measure good so i'll give an estimate ;)

Ingredients:
0,5 broccoli, steamed/boiled
1 medium sized boiled potato
2 carrots, grated
1 vegetable stock cube
I think 1 dl oatmeal, or maybe it was 0,5 ;p
0,5 - 1 dl flour
1 tablespoon maizenna
Salt and pepper to taste (i only used pepper since the stock cube is already pretty salty)
Some vegetable oil to bake in


Directions:
Chop the steamed/boiled broccoli and potato into pieces with a foodprocessor for example and might aswell add the vegetable stock cube here aswell so it is into pieces also (i tried to pulverize it a bit first). Then add the grated carrot (or if you have an awesome foodprocessor like mine, then grate it on top of the rest with the food processor ;D hehehe). Mix it nicely together and add the oatmeal, flour, maizenna, salt and pepper and mix it more nice together. I guess it's smartest to let it rest/cool a bit here, but i was too lazy so i just heated some vegetable oil in a pan and fried the burgers some minutes on each side until they were ready ^.^

Then munch munch time ;p (i ate it with mashed potatoes, salad and some vinaigrette made of mustard, vegetable oil, soyamilk and vinegar i think (the vinaigrette was gifted to me since i like it so much! ;D))

Now i'm empty of broccoli, might buy some more later this week though =p hehe

Veggie-soup

I wanted to use some vegetables to make a soup so i just mixed alot of random stuff =p Its 1 month ago so could be i remember bad xD

Veggie-soup

Celery
Carrot
Potato
Veggie bullion/stock + as much water you need
Tomato if wanted
Paprika/bell pepper if wanted
Leeks/onion/garlic if wanted (i regret i didnt use onion)
Peas/lentils/beans/pasta if wanted (i used some frozen peas i had xD)
Spinach if wanted (<3 spinach, i used frozen ones)
The spices you want ^.^ for example salt and pepper

Cut the vegetables in pieces and boil it until its tender, then if you want you can do it in a food processor (i did that now, but normally i don't do it). A lot of variation possibilities depending on what you have and like ^.^

This soup tasted like a vitamin bomb or so, probably because of the food processor  xD But was also yummy ofc =p

Samosa

I like samosas a lot, but they take a while to make (specially since i'm slow and take many breaks xD) so it's not so often i make it =p The vegetables in it can be varied from what you have and like i think =)

So here's the recipe copy-pasted from here: Samosa

Vegetable Samosa Filling

1 Potato finely diced (5 to 10 mill cubes)
1 carrot finely diced - as above
2 cloves of crushed garlic.
1 Onion finely chopped
1 Cup of frozen peas
1 tblspn vegetable oil
2 tspn curry powder or your own spices according to taste
Salt, Pepper to taste.
100ml of vegetable stock.
Heat the oil in a frying pan, add the onion and garlic, mix in  the spices and fry until soft. Add the vegetables, seasoning and stir well until coated. Add the stock, cover and simmer for 30 minutes until cooked.
Now it's time for the pastry.

Making the Samosa Pastry

You don't have to make your own pastry. You can simply buy some ready-made pastry from the shop. For samosas you want to fry, use Filo Pastry and for samosas you want to cook in the oven use Puff Pastry.
This recipe will make enough pastry for 24 samosas and you will need:
225gm. plain flour
2 tspn. salt
2tblspb. vegetable oil
80 ml warm water.
Mix flour and salt into a bowl. Make a well into the centre and add the oil and enough water to make a firm dough. Knead the dough on a floured surface until smooth and roll into a ball. Cover in plastic wrap and set aside at room temperature for 30 minutes.
Divide the pastry into 12 equal pieces. Roll each piece into a ball and roll out into a circle of 15 cm. Divide this circle into two equal pieces with a knife.
Brush each edge with a little water and form a cone shape around your fingers, sealing the dampened edge.
Fill the cases with a tblpns of your chosen mixture and press the two dampened edges together to seal the top of the cone.
Deep fry the samosas in hot oil until crisp and brown take out and drain on a paper towel.

Some dinner i had =p

I've been sick since Sunday now (throat infection or something) so i have been weak and tired, and it hurts in my throat when i swallow, so haven't been posting a lot lately and i haven't been cooking a lot lately either, but i looked through the pictures i have taken earlier and i found a picture of my dinner last Tuesday, so i guess it's time to post it =p

I had been working at a place kinda far away from home (30 min with car or 1 hour 30 min with bus xD), so i asked my bf if he could make some dinner for me, and he cooked up some potatoes and chopped some zucchini and peeled some carrots, so i used that in a mix with onion, bell pepper, cucumber, salad, tomato, and a frozen mix with peas, cauliflower and more carrots. Worked out pretty well with soy sauce on top of course ^.^

Fried potatoes with brussel sprouts and carrots

This recipe i have made myself ^.^ It's a bit different from the buljong rice with fried vegetables, but at the same time it's pretty similar ^.^ The vegetables you add can differ from what you want/have. I got empty of brussel sprouts for example, so i added broccoli instead (they got the same color =p). I think this recipe should be for around 2-3 persons, but could be im wrong.


Fried potatoes with brussel sprouts and carrots

Ingredients:
4-6 medium potatoes
0,5 onion
6-10 brussel sprouts (or broccoli =p)
(Peas)
2 carrots
Soy sauce <3

Method:
Peel the potatoes, then boil them till they are ready. Cut the potatoes in smaller pieces and put them in a frying pan with oil and fry it a bit. Add onion, brussel sprouts (i use frozen), peas if you want (i use frozen) and let it get soft/unfreeze. Peel the carrots until whole carrot is just a bunch of peels. Mix the carrot peel with the rest and fry it a bit more. Serve with soy sauce and salt and pepper if you want it =p


Looking at the picture, i see no brussel sprouts actually, only broccoli, but the brussel sprouts are there too! xD

Celery soup

I wanted to use celery in a recipe, so i searched on vegweb and found this recipe: Cream of Celery Soup

In the recipe it says to refrigerate overnight, but I'm waaayyy too lazy to do that, so i just skipped that part and continued to next point ^.^ It worked out well anyway =D Also i don't have parsley atm so i used a bit of leeks instead but i guess you can just skip it completely xD i also was using random amount of potions of the different ingredients xD (i wanted to make for 1-2 persons xD)

Well here's the recipe copy-pasted from vegweb where all credits goes to the author:


Cream of Celery Soup

Ingredients

     1 small onion, chopped (i used 0,5)
     olive oil, as needed
     1 bunch celery, chopped (i used 1,5 stalks)
     4 cups water + 1 veggie bouillon cube (i used 3 dl water or so)
     2 medium potatoes, peeled and chopped (i used 2 small potatoes)
     1 bunch fresh parsley, divided (i used 5 cm of leeks)
     2 cups nondairy milk (I use soy) (i used random amount without measuring, just poured in)
     salt and pepper, to taste (didnt add this xD)

Directions:

1. In stock pot, add onion and sauté in a few tablespoons olive oil until soft. Add celery (including leaves) and sauté for a few minutes more.

2. Add water, veggie bouillon, potatoes, and approximately a dozen whole parsley sprigs.  Simmer covered for about 1 hour.

3. Let cool and refrigerate overnight. To finish soup, remove parsley sprigs and liquefy in food processor. Add milk and reheat slowly being careful not to boil, as it will separate the milk.

4. Add fresh chopped parsley, salt and pepper to taste.  Add more diced celery if you prefer more texture.

This soup is surprisingly flavorful for being so simple.  If you find you have a bunch of celery leftover from another recipe, this is great use for it.  The more celery you use in this soup the more celery flavor you will get.  You can make this soup without it resting overnight but the flavor will be weak.  Pairs nicely with crusty bread.

Serves: 4, Preparation time: 1 day

Buljong rice with fried vegetables

Finally a recipe that i made myself and didn't "steal" from someone else their blog lol xD Was kinda kev (my bf) who made it first but i'll just say its mine (since i make it the most rofl xD)

It can be made with different vegetables btw =p Like this time i added cauliflower, but normally i use without =p


Buljong rice with fried vegetables


Rice:
Rice (normally i use 0,5 - 1 dl for each person)
Water (2* - 3* the amount of rice =p for 0,5 dl i used 1,5 dl water, but it doesn't have to be so accurate =p)
Vegetable buljong/stock =p (for making yummy rice =D)
Spinach (can be omitted =p i use frozen spinach btw for extra color of the rice, but kev doesn't like this so sometimes i skip the spinach =p xD)

Vegetables:
Potato (i normally use 1 medium one for each person)
Carrot (again i use 1 medium one for each person, or so the potato-carrot ratio seems nice xD)
Broccoli (i add so its nicely color with the potato and carrot xD i guess maybe 1/4-1/8 of a broccoli?)
Onion (i guess 0,5/person)
Garlic (1 clove/person xD i love garlic! xD)
Oil
Basil spice =p
Soy sauce



Procedure:
Boil the rice with the water, buljong/stock and the spinach if you want it greenish untill rice is ready (i guess most need 15-20 min, if water dry up before its ready then add some more water =p).
The potato should be boiled, i normally use the microwave for this: i remove the outer layer of the potato and stab it a bit with a fork, then i put it on a plate and in the microwave for like 15-30 sec on each side on medium to high temperature (i don't put it in water, so i guess boiling is a wrong term?).
Cut the vegetables in pieces (like 1 cm cubes or bit less maybe) and fry them in oil =p I normally add them like they come and not all at the same time, so first carrot, then potato/broccoli, and then onion when the rest is almost done, and then garlic last =p
When all vegetables are added, then i spice it a bit with basil =p (<3 basil!!) Then tadaaaa ready ^.^ Then i put the rice and vegetables on my plate and add some soy sauce on top, then nom nom nom ^.^


On the pics i have cauliflower too, so if you want this in as well then just add it with the broccoli =p

Ratatouille

It took me a while to find out what to have for breakfast/dinner today, but i finally found out! =D Ratatouille! =D I think it's the first time i make this, but i've made minestrone soup before, which is somewhat similar i think =p

Some days ago i bought zucchini and eggplant since they were cheap (only 19 kr/kg! normally they are 30+ or 40+ xD), and i wanted to use something with these ingredients, so ratatouille is a perfect choice then ^.^

Here's what i did, more or less following the recipe (i also add some ingredients not in the original recipe):

Ingredients:
1 garlic
0,5 onion
0,25 zucchini
0,5 red bell pepper
0,25 eggplant
0,5 carrot (or one small)
1 small potato
0,5 - 1 stalk of celery
Some olive oil
    5+ dl water + 1-2 vegetable stock cubes
    1 small box tomato paste/puree
    1 chopped tomato
    Around 1 teaspoon sugar
    Around 2 teaspoons vinegar
    Dried spices: basil, oregano, and whatever other spices i have and wanna add
    Salt and pepper

    Here is what i did:

    I cleaned the vegetables and cutted them in cubes, then i fried them in oil for some minutes until all was nice and shiny, then i added the stock, tomato puree, the chopped tomato and the spices and let it boil. Then i added the sugar and vinegar and let it boil more until the vegetables were tender. Then i added salt and pepper to taste.
