Couscous with tomato and basil

Having a lot of pics of stuff i already made and didn't have time to post yet (more correctly is i didn't spend my time to post it xD time i had a lot of xD)

This dish i often make since it's so easy and yummy! Sometimes i do mushrooms with it as well if i have mushrooms that needs to be used. Then i chop mushroom and fry it a bit before i add the rest.

The recipe i found here on vegweb, but i don't really measure it anymore (but i use about 0,5+ dl couscous, 1 dl water, 1(or more) clove of garlic and 1 tomato, 0,5 vegetable stock, and a lot of basil xD), and i never added parsley (since we didn't have that and later i just forgot it was in the recipe). So thanks to the author for this very simple and yummy recipe! =D

Couscous with Tomato and Basil

Ingredients i use:

    1 teaspoon vegetable or olive oil
    1 clove garlic, minced
    1 tablespoons dried basil
    1 dl water with 0.5 cube of vegetable stock
    0.5 dl couscous
    1 chopped tomato
   salt and pepper to taste

Directions:

Heat oil and cook garlic until softened. Add water, basil and stock cube and bring to a boil. Add couscous and put off the heat. Let it rest for some minutes until couscous is soft. Add chopped tomato, salt and pepper and enjoy =)

Vegan in Leuven - Belgium

I'm on vacation in Belgium now with my boyfriend like i said in my last post. His family live here, so we sleep at his grandparents home (since they got space for us), but we often go to his parents home during the day since it's internet there. I'm having the luxury that they cook food for me, normally the same as they got, but with a "meat-replacer" from Alpro-Soya for me where they have meat (I'm still the only vegan =/).

I like how much from Alpro-soya they got here in the shops, and how cheap it is compared to Norway! They got butter, yoghurt (exotic/peach, cherry/blueberries, strawberry/forest fruit, natural, blueberries, vanilla), pudding (vanilla, chocolate, caramel <3 this one xD, dark chocolate), milk (banana, chocolate, strawberry, vanilla, natural, forest fruit, mocca(?)), "meat-replacers" (spinach filet, fruitfilet, more filet, tofu, minced "meat", mini-pieces, burger, nuggets), so alot more than I'm used to from norway where they just got chocomilk and choco or vanilla pudding and some yoghurts.

Also vegetables here are cheaper than in Norway, for example zucchini was 0.99 - 1,45 € here, while in Norway, normal price was 2,5 - 4 € or so (it depends from week to week).

The rest i didn't check specifically for, but i assume that they got more here than they got in Norway and the rest i can import xD Something that I'm not too happy about here though is the water. The water from the spring doesn't taste good in my opinion, and not the bottled ones either, except for SPA which is the most expensive bottled water, but i guess i will get used to the spring water after a while since i don't really want to buy bottled water.

In Leuven, which is the town near where we live, they got Loving Hut, which is a vegan fast food restaurant. I've been wanting to visit Loving Hut since i first heard of it! So last week me and my bf was in town, and we were hungry so we decided to go on Loving Hut for something to eat. I ordered the vegan burger for 5 €, and my bf ordered the small soup with bread for 3,5 € (pics will come later). We both thought our food was very yummy! The burger was really nice, i recommend it for everyone to taste! ^.^ Wonder what i will order next time =p

They also got another veggie restaurant here called Green Way. They use milk and egg in some of the dishes there, but they also got clearly marked vegan dishes. I haven't eaten here yet, but i will try it out later i hope =)

I also searched the internet for some other veggies in Belgium, and here are their sites: vegetarisme.be and the forum. Luckily i understand some dutch so i can read almost without problems =)

Still no luck in our apartment search, but I hope we will find something soon.I think it will be a nice place to live here =) Just hope i can find a job also.

Finally a post again!

Sorry that I haven’t been posting for a while but I have been busy with exams and stuff. I normally had 3 exams, radiation physics, subatomic physics and quantum mechanics, but I skipped the last one and went on vacation to Belgium instead since my bf wasn’t feeling too good and wanted to visit his doctor here. I think it’s so hard to get motivation to study for exams, so I end up only studying the evening/night right before the exam is. Somehow it always goes good still, but I don’t think it would go good on the last exam since I felt I didn’t learn much/anything during the course, so I found out I might as well go on vacation then. It has a price of course to skip an exam, now I need to wait half a year to get my bachelor, but I was just planning to study random courses anyway, so for me it’s no big deal.

For Belgium I got some 500€ vouchers that I could buy tickets for after being stuck on Copenhagen airport for 8 hours after being denied boarding last year, so that money came in handy ^.^ The ordering was a last minute decision kinda, and the days after my exam plane was pretty expensive, so I chose to drop the exam and travel earlier. The planes went via Copenhagen airport, and the first plane left at 6:00 so we had to wake up at 3:40!

The planes went nice, but I had just had 2 hours of sleep that night, but I could sleep a bit on the 2nd plane, then we got to the house and we could sleep a bit more after eating. Now I’ve been here for some days. I’ve managed to get a cold already, and we’ve also been looking around for apartments to rent here in Belgium, but no luck so far, all is rented out very fast or is too expensive.

I only have internet at my bfs parents’ home atm, which is not where we sleep, but I will try to get some more posts here soon =)
