I bought corn cobs since they were 2 for 10 kr (normally its more) to test it out. I fried one in nutana margarine and did some salt on it, and tried to eat it (my technique wasn't too good, so i looked up on internet how to do it xD). The 2nd one i did in the microwave then did margarine and salt on that one too ^.^ It was very yummy, so this i will buy more of! =D

Raisin scones
These scones i've made several times. They don't taste a lot by them self except for the raisins but you could add cinnamon and nuts and stuff to fix that, or do butter and jam on or something xD But they are yummy without that also ^.^
The recipe i found on vegweb here (english): Really Good Vegan Raisin Scones
Here's what i did, more or less following the recipe from the link above:
3 teaspoons baking powder
1/4 teaspoon salt
1 tablespoon sugar
0,5 dl softened margarine or vegetable oil
1 dl raisins
1,5 - 2 dl soymilk
Here is what i did:
I mixed the dry ingredients together and added the margarine/oil until the dough got crumbly. Then i added milk and raisins and mixed well. Then i putted them on a baking sheet and had in the oven on 230°C for about 10-12 minutes.

Peas/lentils/beans/pasta if wanted (i used some frozen peas i had xD)
Spinach if wanted (<3 spinach, i used frozen ones)
The spices you want ^.^ for example salt and pepper
Cut the vegetables in pieces and boil it until its tender, then if you want you can do it in a food processor (i did that now, but normally i don't do it). A lot of variation possibilities depending on what you have and like ^.^
This soup tasted like a vitamin bomb or so, probably because of the food processor xD But was also yummy ofc =p

Foodtest: Spelt apricot strudel
Today i was shopping at my local health store kinsarvik. I found some out of date food for half price that i bought (i like buying it cheap even if its out of date xD), and i've been inspired by VeganVoff's blog to write reviews of new food i test out =p
So here's a review about some spelt apricot strudels i bought =p
Personally i think the apricot spread was yummy and tasted like apricot jam or so, but the coating i wasn't too much fan of xD it didn't taste much and it was crumbly and dry, maybe because of the out of date, i'm not sure xD I think something i make myself would taste better, atleast the coating xD It wasnt tasting bad though, just not something super-yummy either xD It's not something i would spend my money on again i think (specially not 50 kr xD), but if i got it for free i would take it =p
So here's a review about some spelt apricot strudels i bought =p
The strudels are organic, made of spelt, no added sugar, dairy free, egg free, yeast free.
Ingredients: *peach apricot spread 35% (corn syrup, peach 15%, apricot 8%, pectin, corn starch, citric acid, vanilla nat. flavour), *spelt flour 34%, *non hydrog. veg. margarine, *rice malt, salt.
* from organic farming.
Nutritional analysis per 100g: Energy 400 kcal/1678 kJ, Protein 4.2g, Carbohydrate 56.4g (total sugar 24.5g), Fat 17.5g (saturated fatty acids 8.1g), Fiber 2.5g, Sodium 0.42g.
They costed 25 kr for me since they were out of date (around 50 kr normal price). 1 euro = about 8 kr.

Easy vegan chocolate cake
This is the "main" chocolate cake that i make, mostly because it's both easy and yummy! It mostly use ingredients everyone has at home so it's very easy! ^.^ So i would classify it as the best chocolate cake there is! =D

Samosa
I like samosas a lot, but they take a while to make (specially since i'm slow and take many breaks xD) so it's not so often i make it =p The vegetables in it can be varied from what you have and like i think =)
So here's the recipe copy-pasted from here: Samosa
1 carrot finely diced - as above
2 cloves of crushed garlic.
1 Onion finely chopped
1 Cup of frozen peas
1 tblspn vegetable oil
2 tspn curry powder or your own spices according to taste
Salt, Pepper to taste.
100ml of vegetable stock.
Heat the oil in a frying pan, add the onion and garlic, mix in the spices and fry until soft. Add the vegetables, seasoning and stir well until coated. Add the stock, cover and simmer for 30 minutes until cooked.
Now it's time for the pastry.
This recipe will make enough pastry for 24 samosas and you will need:
225gm. plain flour
2 tspn. salt
2tblspb. vegetable oil
80 ml warm water.
Mix flour and salt into a bowl. Make a well into the centre and add the oil and enough water to make a firm dough. Knead the dough on a floured surface until smooth and roll into a ball. Cover in plastic wrap and set aside at room temperature for 30 minutes.
Divide the pastry into 12 equal pieces. Roll each piece into a ball and roll out into a circle of 15 cm. Divide this circle into two equal pieces with a knife.
Brush each edge with a little water and form a cone shape around your fingers, sealing the dampened edge.
Fill the cases with a tblpns of your chosen mixture and press the two dampened edges together to seal the top of the cone.
Deep fry the samosas in hot oil until crisp and brown take out and drain on a paper towel.

Confirmation party of my cousin
Last Sunday i was in the confirmation party of my cousin. I was still sick then, so i felt weak and had no energy and stuff and my voice was weird, but it was nice to meet family again anyway =) In our family we wear an outfit called "bunad" in confirmation parties, specially the females (it's a traditional Norwegian outfit). I'm not the biggest fan of wearing this outfit since its heavy and warm and has a lot of needles in it, but i guess its ok since everyone else wears it xD
Since i'm the only one in my family who is vegan, people normally don't prepare food for me and i'm happy with that since then i can bring what i want to eat ^.^ They had salad and fruit in the party that is vegan, but it's boring to eat only that i think =p Since i was working the day before, i didn't have much time to make food + i was sick, so i asked my mom if she could make samosa and chocolate cake, and i gave her the recipes and they turned out well ^.^ (these recipes will come later =p)
Here's a picture of me before we gonna eat, i have the samosas on my plate ready to be eaten ^.^ Yam yam yam =D

Banana spice cake
I think this is my favorite cake! =D The nice mix of sweet bananas with yummy spices in a delicious cake! =D It had been a long time since i had made this cake, but then i was invited to a party and i had some ripe bananas, and the people hadn't tasted banana spice cake before, so banana cake felt like the perfect cake to make ^.^ Btw the riper your bananas is, the better =p I wouldn't use green bananas for this recipe xD

Here's how i did it, more or less following the recipe (best to follow the link for the real recipe maybe =p):
Ingredients:
4 dl flour

1 dl soymilk + 1/2 tablespoon lemon juice mixed together

2 tablespoons NoEgg eggreplacer
1 teaspoon vanilla
1 teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon cloves
Then i mixed the dry ingredients, and added the wet ingredients and mixed more, and poured into a cake shape (ca 20x30 cm) and baked in oven at 175°C for about 35 minutes.
Banana spice cake is definitely a good reason to stack up on bananas! xD Atm i only have some frozen bananas so i need to buy more bananas soon! xD

Some dinner i had =p
I've been sick since Sunday now (throat infection or something) so i have been weak and tired, and it hurts in my throat when i swallow, so haven't been posting a lot lately and i haven't been cooking a lot lately either, but i looked through the pictures i have taken earlier and i found a picture of my dinner last Tuesday, so i guess it's time to post it =p
I had been working at a place kinda far away from home (30 min with car or 1 hour 30 min with bus xD), so i asked my bf if he could make some dinner for me, and he cooked up some potatoes and chopped some zucchini and peeled some carrots, so i used that in a mix with onion, bell pepper, cucumber, salad, tomato, and a frozen mix with peas, cauliflower and more carrots. Worked out pretty well with soy sauce on top of course ^.^

Easter marzipan
I wanted to make some yellow easter candy and what isnt better than using marzipan then?! =D Actually the cheapest marzipan in shop is vegan ^.^ To yellow it i used turmeric (gurkemeie) which leaves some taste, but i like this taste so the marzipan gets even better then ^.^
Easter marzipan
Ingredients:
Vegan marzipan
Turmeric
Vegan chocolate
Method:
Mix the marzipan with turmeric until its yellow and form random shapes from it. Melt the chocolate and dip the marzipan in. Put in fridge or freezer until chocolate is stiff. If you have more melted chocolate you can do more layers of chocolate. Enjoy ^.^

Nachos
In the first days of easter vacation my sister had made non-vegan nachos, and after the lasagna success i decided to make vegan nachos ^.^
This time i kinda did measure, but since its 6 days since i made it i kinda forgot all, so could be recipe is bad xD
Nachos
Ingredients:
0,5 - 1 onion
Around 2 gloves of garlic
0,5 - 1 bell pepper (paprika) (optional)
1,5 dl TVP (i think this is what i used xD)
0,5 - 1 vegetable stock (i dont remember what i used)
1 jar of pasta sauce (i know jarsize differ a bit, so take as much or little as you want xD)
0,5 dl (or more) water
Spices, for example basil, oregano etc xD (i think i added cumin and paprika powder and other stuff too xD)
Corn
Tortilla chips
Vegan cheese for topping (optional)
Method:
Fry the onion and garlic until soft and add the bell pepper, TVP mixed with stock, pasta sauce, water and spices and boil for a bit. Put a layer of tortilla chips in a pan (you can spray the pan with oil) and then some corn then a layer of TVP mixture and then more corn and top it with vegan cheese (if i remember correctly i added some olive oil on top also). Bake in oven on 200°C - 225°C for 5-15 minutes (i did 10) until the cheese is melted (if the cheese does it lol).
I did 2 layers, and the tortilla chips ended up soft then so if you want soft tortilla chips then add them in layers but i wont do this again xD I think i will use the white sauce from the lasagna recipe as topping next time, since i liked it and i think it would fit =p So its kinda like nacho-lasagna xD
I will make this again for sure! =D

Well, to the point of this post which is recipe of chana masala (i got pics from last sunday/monday when i made it, dont remember which day xD).

1 - 2 handfulls of chickpeas (i dont really measure, i just pour in, but i guess it is half a can or so)
0,5 box of coconut milk
1/4 - 1/2 tablespoon lemon juice
Salt and fresh (black) pepper
0,5 tablespoon vegan margarin
Boiled rice to serve with.
