Summer soup

Hard to pick name for this soup, but the color reminds me a bit about summer (sunset for example) so i call it summer soup (but you can eat it at all times of the year of course).

This recipe i have made myself by just using random vegetables =p I think it should be for about 1-2 person btw or so, not sure, i just write what i used =p

Summer soup

Ingredients:
1 carrot
0,5 celery
0,5 red bell pepper
1 stock cube
1 dl red lentils
4 dl water
salt and pepper

Cut the ingredients in pieces and boil them for about 10-20 minutes, then do it in the food processor.

Very short and simple soup =p

Prague

Here comes pictures from Prague!

Day 1: 9th July:

We arrived in Prague, but we couldn't check in on our hotel until after some hours, so we went around a bit in town first.

Day 2: 10th July:

We traveled with train to Kutna Hora to see a church full of human bones (and yes, they are real).
Later on the day we went over the Charles Bridge (and i took pics of lots of statues, but i guess they are boring so i wont post them), and we also went on a guided boat trip on the river (which i sadly don't have pictures from either =p) In the evening we went to the castle (somehow i don't have any pictures from the castle either lol).

Day 3: 11th July:

I didn't take many pictures this day, probably since i think i got bored from taking pictures from the other days. First we went shopping, then later we went to see the astronomical clock and they other ate on Hard Rock Cafe and i ate spring rolls on Loving Hut!! =D (link to menu on the loving hut i was on, there are 3 in Prague!!). Day 4: 12th July:

We take plane home =p On the airport in Prague i found some yummy candy so i bought many of them! ^.^

So ye, Prague is cool place, lots of stuff to take picture of and to do =p And i really like the cheap prices there! If i go there again i wanna go more on Loving Hut also =p Was a lot nice on the menu that i wanna try out! =D

Posty

Yesterday i was at birthday party of my friend, it was nice to hang with them =D I also made cookies and snickers (recipe to come) for the party =p Then we watched a cool/funny movie ^.^ (i forgot name xD)

Hope i can figure out soon how to upload pictures from my moms old camera to the pc though, since my normal camera is waiting for me in belgium =p If not, i still got pictures from May of food i made that i planned to post but didn't do yet =s

Btw feel free to comment on my posts, i feel that i'm the only one commenting them xD I know i have some visitors every now and then!! xD

Rice Porridge

I earlier tried making vegan rice porridge by just replacing normal milk with soy milk, but that didn't work too well (specially since i didn't really like porridge in the first place after having it every Saturday since i was born xD). But then i found this recipe on the norwegian vegan-site and decided to give it a try, and i'm happy i did, since this porridge is very yummy! =D It taste sweet and creamy like rice pudding =p So it's better than the non-vegan one that i had for all those years @_@

Risengrynsgrøt

Ca. 5 portions

Ingredients:

5 dl water
1/2 teaspoon salt
2,5 dl porridge-rice (not fast rice)
4 dl cocnutmilk
7,5 dl sweet soya milk, for example blue Alpro (if you use non-sweeted soy milk you should add some extra sugar)
2 teaspoons sugar

Directions:

1. Boil water and salt. Add the rice and let it boil on low heat until the water is almost boiled away (about 15 minutes).
2. Add the coconut milk and soy milk. Let it simmer on low heat until the porridge have nice consistency (about an hour). It is important that the heat isn't too high, since the porridge easily over-boil or burn.
3. Add sugar. Taste if it's enough sugar and salt, and if it isn't, then add more. You can let the porridge stand some minutes before you serve so it thickens, but it you think it's too thick you can thin it out with some extra soy milk.
4. Serve with sugar, cinnamon and vegan butter.

Tips:

If you have leftovers you can make rice pudding! Whip some cream (for example GoGreens Whipable Oat Cream) and mix the cream with cold porridge. Serve with stirred berries or red sauce.

Back in Norway again now =p

I've been in Belgium now 8th june - 6th july, and in Prague 9th july - 12th july, so it's been pretty busy lately =p Now I'm back again in Norway though, so I hope I can relax a bit before I move to Belgium to my new (rented) apartment =p We finally found one nice apartment, that's nicely placed ^.^ I'll post pictures later =p

In Prague I was with 5 friends of me. It was very nice there, and sunny every day and nice temperatures! =D We went to a fountain ballet of Romeo and Juliet, to Kutna Hora bone church, the Charles bridge, the castle, with guided boat on the river, shopping, to the astronomical clock, and many other places! It was a lot of walking, so my feet and my back hurt sometimes. I also went a trip to one of the Loving Hut's that they got there (they got 3 in Prague!!) and had some yummy spring rolls =p The prices in Prague were very cheap! ^.^ About 1/3 of what they are in Norway xD On the airport in Prague I bought some yummy candy ^.^ I'll post pictures of the trip later =p It was fun at least! Hope I'll have money for a trip with my friends for next year too! But to another place then, since it's nice to see more of the world =p

Vanilla cupcakes

Here's the recipe of my favorite vanilla cupcakes! I've made them very many times and they are very yummy =D You can also do chocolate in them for making chocolate cupcakes =p

Here is what i used, more or less following the recipe from the link.

Ingredients:
3 dl nondairy milk
1 tablespoon vinegar
0,67 dl vegetable oil
0,5 dl maple syrup or other type of syrup
2 teaspoons vanilla
4,33 dl flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1,5 dl sugar
1/2 teaspoon salt

Mix together the wet ingredients and set aside, then mix together the try ingredients. Then add the wet ingredients to the dry ingredients and mix well. Then fill the dough into muffin cups and bake in oven on 175°C for 14-15 minutes.


Lol i got tempted to make these again now! Yammie! *drool* =p I will definitely make them many times more in the future =D

Vegetable pilaf

The spices in this dish makes it extra yummy ! =D (i spice it extra much! xD) (my bf didn't agree though, he don't like spices too much so i made rice for him too after but with just bullion and vegetables =p xD)

The recipe i found here on the norwegian meatfree monday site. It says they found it in the book “Worlds best vegetarian dishes” by Linda Fraser, Bladkompaniet AS. I will translate the recipe to english, if you want the norwegian recipe press the link =p I made some changes that i add in cursive, you can also use all frozen vegetables too =)

Vegetablepilaf

Ingredients
4-6 portions
  • 225 g basmati rice
  • 2 tablespoons oil
  • 1/2 teaspoon cumin seeds (i use just normal cumin spice, not seeds)
  • 2 bay leaves (i skip these normally since i don't have)
  • 4 green cardamom seeds (i use normal cardamom spice)
  • 4 cloves (i use cloves spice)
  • 1 nicely chopped onion
  • 1 carrot in small pieces
  • 50 g frozen peas
  • 50 g corn
  • 25 g cashew nuts
  • 1/4 teaspoon cumin
  1. Clean the rice in cold water, have it in a bowl/pan and add water till it covers the rice. Let the rice lay in the water for 30 minutes. (Or skip this part if you are lazy xD)
  2. Warm the oil in a pan and fry the cumin seeds for 2 minutes. Add the bay leaves, cardamom and cloves and fry for 2 more minutes. (If you use spice and not seeds, then you can skip this part also)
  3. Add onion and fry it till its soft and light brown for about 5 minutes.
  4. Add the carrot pieces and fry for 3-4 minutes.
  5. Remove the water from the rice and have it in the pan together with peas, corn and nuts. Fry for 4-5 minutes
  6. Add 5 dl water, cumin and salt. Cover it and let it simmer for 15 minutes till all the water is gone. Let it stand covered for 10 minutes before serving. (If you aren't hungry and wanna eat it right away =p)
I used frozen vegetables here (American mix) and over-spiced it a little =p Very yummy though! =D
