Yoyo everybody, merry xmas! =D
I'm still alive, even though it doesnt seem like it from my posting frequencies xD
So yesterday i celebrated xmas with my family. As usual norwegian tradition i made xmas rice pudding or whatever it's called in english for lunch, made with porridge rice, soy + coconut milk, vanilla powder, sugar, and grounded almons. With cinnamon, raisins and vegan margarine on top =p Very delicious =D
They got a new vegan margarine in Norway now that was actually whiter than my rice pudding as you can see on the picture, which i found a bit funny, cuz normally the margarine/butter is yellow =p
Also my vegan rice pudding was darker in color than my families non-vegan rice pudding =p
After eating we visited my grandparents for a short while before we drove back home (or i drove back home because i'm training for my driving licence). Then i prepared the nut roast that i would have for dinner. I used the recipe that i always use on veg-veg their sites, except i used some more nuts, regretting i didn't make even more =p Guess i'll write the ingredients on my blog so i have it here for later =p
Ingredients:
200 g mixed nuts (i used cashews, brazil nuts, almonds, peanuts, walnuts)
100 g crumbled bread
1 chopped onion
2 chopped garlic cloves
1 tablespoon vegetable oil
2 tablespoons flour
1 tablespoon spice mix (i used paprika, cloves, ginger, pepper, chili, garlic, nutmeg)
1 cube vegetable bullion
1,5 dl boiling water
salt and pepper
So i did the nuts and bread in my food processor until it was chopped into pieces, sauted the onion and garlic in the oil, then i added all the ingredients in a bowl and spiced it as much as i wanted, then did it in an oiled bread shape, covered with aluminium foil, and baked in the oven on 180°C for about 1 hour.
Next to the nutroast i had boiled potatoes, brown sauce, mashed rutabaga, mushrooms, onions, brussel sprouts, and lots of soy sauce =p
After eating we opened the presents.
Here's what i got:
A purse, 2 different cooking books, vegan chocolate, tvp chuncks, mini cake shapes, touchscreen gloves, lavendel smelling candle light, hand soap, sweater, pizza pan, circular glass shape, power plug thingy, huge pillow and cash =p
Pretty nice gifts, i'm very happy for all of them =D
After opening gifts we wanted to watch the movie "The Holiday". Sadly we didn't have the dvd in our house, so we tried streaming it. Sadly internet wasn't in a very cooperating mood (slow and falling out), so we could watch about 10 minutes before we had to load it for like 5 minutes to continue watching it, so we only got 49 minutes into the movie before we gave up xD
It was a nice xmas for me and i got a lot of cool stuff that i wanted, yummy food, and i had a nice time together with my family =D I hope everyone else had a nice xmas aswell =D

Duyvis's vegan products (coated peanuts)
One day i found a Crac a Nut Barbecue (coated peanuts with barbeque taste coating) from Duyvis in the closet, and i wondered if it was vegan or not, so i emailed the producers and asked which of their products that are vegan. Here is the reply i got.
Sorry for the dutch btw. Those that are listed are vegan. Always check ingredients in case there are any changes in recipes or so.
Which basicly means that most of their products are vegan, but not all.
I've found some pics from Colruyt and Delhaize their websites to show in pictures which are vegan. These products are sold in Belgium in Colruyt, Delhaize, and probably other shops too like Carrefour, but i'm not sure which shop has which products in stock.

Hieronder vindt u een lijstje met de Duyvis producten die geschikt zijn voor een veganistisch regime:
Oven Roasted Crac a Nut Szechuan Pepper, Sweet Paprika en Fine Herbs
Oven Roasted Peanuts
Peanuts Zout
Crac a Nuts BBQ, Paprika

I really enjoy eating coated peanuts. My favorite is the Rema 1000 chili nuts from Norway. Sadly they don't have that one here in Belgium, but luckily they have other coated peanuts here that also are yummy =D
Previously i have only tasted the paprika one, and now also the barbecue one, which both were yummy. Now after finding out more of them are vegan i guess i'll try out the rest too =D

Snickers
Homemade snickers =p Very easy recipe, i think i found it on www.kakeprat.no but it's not there anymore, so could be it's on another site, oh well let's jump to the recipe the way i remember it =p
Snickers
Ingredients:
Ca 1 jar of (crunchy) peanutbutter, around 350g i guess (i use the one from green choice)
Ca 1 jar of syrup (i guess 500g, could be im wrong xd) (i use this one)
Ca 1 liter of corn flakes (lol =p)
Around 200g (dark) chocolate
Warm the peanutbutter and syrup until it's nicely mixed and liquidish, remove pan from the heat and add corn flakes and mix it so the corn flakes are covered of peanutbutter-syrup mix. Put the cornflake-mix in a small bake pan and pour melted chocolate over until its covered. Put cold until chocolate is stiff, for example in the fridge or in the freezer. Cut into pieces and serve =)

Peanut caramel cake
Yesterday i made this cake (peanut caramel cake):
I found it on veganmisjonen her blog some weeks ago and i made it then and i loved it, so yesterday i wanted to make it again, but i had a problem that the recipe was removed from the blog (possibly it's in her book that i reccomend for everyone to buy!). Luckily i found an edited version on another blog (norwegian and english) so i could make it anyway! =D
I will add a translated version of the recipe here in case someone else wanna make it =p All the credits for this recipe goes to http://veganmisjonen.blogspot.com/. I recommend checking out more of her recipes as well since they are very yummy ^.^

Peanut-caramel cake:
The cakedough:
0,75 dl powdered sugar
1,5 dl sugar
1/2 teaspoon salt
100 g vegan butter/margarine
4,5 dl flour (2,5 dl in first)
1 teaspooon baking powder
1 dl soymilk
Peanut caramel mix:
350 g peanutbutter (you can also make it yourself by adding normal peanuts in a blender or food processor or something till it becomes peanutbutter =p i did this =p it takes some minutes, so dont be impatient if it isnt creamy straight away =p)
1 dl syrup (i use the cheap one, but its supposed to be agave syrup xD)
1,5 dl water
1. Set the oven on 200°C
2. Mix powdered sugar, sugar and salt with (room temperatured) butter. Mix to a creamish thingy and add 2,5 dl flour.
3. When you got a crumbly dough consistency, you set away 1 dl of the dough that you will use later as topping of the cake.
4. Mix in baking powder, milk and the rest of the flour.
5. Oil/butter a (pie) shape (about 25 cm in diameter) and press in the dough. (You can also skip to oil it, i forgot lol xD) Put in the oven on 200°C in about 15 minutes.
6. While the cake is in oven you make the caramel mix: In a pan, mix water, syrup and peanut butter. Warm it carefully while you stir, you will see that the mix starts to become like soft caramel, and it will thicken and become darker. When it almost starts to boil, you remove it from the heat while you stir.
7. Take the cake out of the oven and press down the parts that grew larger than the other parts. Stir out the caramel mix on the cake and add the remaining dough on top of the caramel mix. Bake in oven for 15 minutes more on 200°C (till the topping is golden).
Tadaaaaa you got cake ^.^
Warning: Not good cake for you if you follow low-carbo diet XDDDD
Hope you enjoy ;D
